Place sliced onions into bottom of crockpot. Pour beef broth over onions. Add 2 TBS butter over onions. Sprinkle salt, pepper, garlic powder and thyme over onions.
Place the chicken in a row over the onions. Season top of chicken with salt, pepper, garlic powder, and thyme.
Place lid on and cook for 3-4 hours on high or 6-8 hours on low. Make sure chicken is tender and cooked through.
After chicken is done, place a thick layer of cheese on each chicken breast. Place lid back on crockpot to allow cheese to melt.
After cheese has melted, remove chicken from crock pot and place on a serving platter.
Make a slurry of 1/4 of crockpot juices, and a 2 TBS of corn starch. Mix together and pour back into crockpot. Mix well until thickened. Add additional slurry if needed.
Plate chicken, onions, and gravy over your favorite cooked rice. Garnish with parsley.
