Crockpot French Onion Chicken

Ingredients

  • 4 skinless, boness chicken breasts or thighs
  • 2 (14 oz) cans Beef Broth
  • 2 medium onions, sliced thick
  • 1/2 tsp thyme
  • 1/2 tsp Salt
  • 1/2 tsp pepper
  • 8 oz shredded cheese, (swiss, or mozarella)
  • fresh parsley, for garnish
  • 2 TBS butter melted
  • 1/2 tsp Garlic Powder

Instructions

  • Place sliced onions into bottom of crockpot. Pour beef broth over onions. Add 2 TBS butter over onions. Sprinkle salt, pepper, garlic powder and thyme over onions.
  • Place the chicken in a row over the onions. Season top of chicken with salt, pepper, garlic powder, and thyme.
  • Place lid on and cook for 3-4 hours on high or 6-8 hours on low. Make sure chicken is tender and cooked through.
  • After chicken is done, place a thick layer of cheese on each chicken breast. Place lid back on crockpot to allow cheese to melt.
  • After cheese has melted, remove chicken from crock pot and place on a serving platter.
  • Make a slurry of 1/4 of crockpot juices, and a 2 TBS of corn starch. Mix together and pour back into crockpot. Mix well until thickened. Add additional slurry if needed.
  • Plate chicken, onions, and gravy over your favorite cooked rice. Garnish with parsley.
