Crockpot Lasagna

Ingredients

  • 1 TBS cooking oil
  • 1 TBS butter
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 2 lbs Ground Beef
  • 1/4 tsp Black Pepper
  • 1/8 tsp Salt
  • 2 tsp garlic minced
  • 2 jars favorite pasta sauce
  • tsps italian seasoning
  • 1 box uncooked lasagna noodles
  • 2 cups cottage cheese or ricotta cheese
  • 2-3 cups mozzarella cheese shredded
  • fresh parsley, for garnish

Instructions

  • In a large skillet or Dutch oven heat up cooking oil and butter over medium high heat. Add bell pepper and onion, cook until softened. Add garlic and cook for one additional minute.
  • Add ground beef, break up into pieces and brown. Drain any excess grease. Season with salt & pepper to taste. Add 2 jars of pasta sauce and 1/4 cup of water. Season with Italian seasoning and mix well.
  • In the bottom of crockpot place 2 scoops of meat sauce. Place uncooked lasagna noodles on top of sauce in one layer. Break noodles as needed to fit in gaps. Place 1/3 of the cottage cheese or ricotta cheese onto noodles. Sprinkle 1/2 cup of mozzarella cheese on top of cottage cheese.
  • Layers 2 & 3 will be noodles, sauce, cottage cheese and mozzarella cheese.
  • Layer 4 will be noodles, sauce and mozzarella cheese. (No cottage cheese on this layer). Sprinkle Italian seasoning over the mozzarella cheese.
  • Cook for 4-5 hours on low until noodles are tender and done. Turn off crockpot and let sit for 20 minutes to solidify. Add fresh parsley to garnish.

  • I’m so happy I found this easy recipe. My family likes lasagna but I don’t like making it very often. I feel like it takes so long to make. I’m going to make this today for supper. We are having friend’s over tonight. Making this is going to give me extra time to do other things.
