Crockpot Meatloaf Stuffed with Cheese

This is the best meatloaf that I have ever had. A delicious meatloaf recipe, stuff it with mozzarella cheese and slather a scrumptious glaze over it. Yep, It’s amazing.

Crockpot Meatloaf Stuffed with Cheese

Ingredients

  • 1 1/2 lbs ground beef (lean)
  • 1 cup panko bread crumbs
  • 1/4 cup minced onion
  • 1 egg slightly beaten
  • 2 tsp minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup milk
  • 1 TBS worcestershire sauce
  • 8 oz mozzarella shredded cheese

Meatloaf Glaze

  • 1/3 cup favorite barbeque sauce
  • 2 TBS ketchup
  • 2 TBS honey
  • 1 tsp sriracha sauce or other hot sauce
  • 1 tsp mustard

Instructions

  • In a large bowl, combine ground beef, bread crumbs, seasonings, onion, egg, and milk.
  • Place a long sheet of foil inside of crockpot and form along the sides. (This will aid in removing meatloaf after it's cooked.) Lightly spray with cooking spray.
  • Place half of the meatloaf mixture onto foil and flatten into a 1/2 inch loaf. Push middle of loaf down. Place shredded cheese into center of loaf and pat down.
  • Flatten down other half of meatloaf mixture in bowl to form top layer of meatloaf, pull the formed layer out of bowl and lay on top of cheese. Pinch together edges of bottom and top layers of meatloaf mixture to keep cheese inside.
  • Mix together glaze ingredients and spread half of glaze all over meatloaf.
  • Cover crockpot with lid. Cook for 6 hours on low or 3-4 hours on hight. (160 degrees internal temperature)
  • Lift meatloaf out of crockpot by lifting edges of foil. Place onto a sheet pan.
  • Place last half of glaze over meatloaf and broil in oven for 5 minutes or so to lightly brown.
  • Enjoy.
