Crockpot Pork Chops, Apples & Apple Sauce

Equipment

Ingredients

  • 4-6 (1" thick) boneless center cut loin pork chops
  • 1 TBS butter
  • 1 TBS cooking oil

Dredging Mix

  • 1 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp onion powder

Apple Mixture

  • 2 medium granny smith apples, cored and sliced or diced (peel on or off)
  • 2 medium yellow onions, peeled and slice thick
  • 1 TBS Dijon mustard
  • 2 cups chicken broth
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3/4 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 TBS dried parsley
  • 3 medium red baking apples, cored and sliced thick (NOTE: These will be used toward end of cooking time.)

Instructions

  • In a bowl whisk together dredging ingredients list above (flour, salt, pepper, paprika, onion powder and garlic powder.
  • Place 1 TBS oil and 1 TBS butter into a large skillet over medium high meat and allow to melt. Dredge each pork chop in flour mixture on all sides and place into hot skillet. Brown on each side for 4 minutes until golden brown.
    Spray a 6 quart crockpot with non-stick cooking spray. Place browned pork chops into bottom of crockpot.
  • In same skillet over medium high heat add 2 TBS butter and 1 TBS oil. Add in diced or sliced granny smith apples and onions. Lightly brown. Mix in Dijon, "Apple Mixture" seasonings list above (salt, pepper, garlic powder, onion powder and paprika). Bring to a boil while stirring. Turn off heat and add apple mixture to cover pork chops in crockpot.
    Place lid on crockpot and cook for 4 hours on high or 6-8 hours on low until pork chops are cooked through and fork tender. Apples will resemble apple sauce.
  • Place cut red baking apples into the sauce mixture in crockpot, place lid back on and cook for another 30-1 hour until desired apple texture is achieved.
