Crockpot Smoked Sausage, Chicken & Rice

Equipment

  • quart crockpot/slow cooker
  • 1 Medium sauce pan

Ingredients

  • 3 large skinless, boneless chicken breasts
  • 1 lb smoked sausage link, cut into 1/4 – 1/2 inch rings
  • 1 medium yellow onion, chopped
  • 1 medium green bell pepper, chopped
  • 3 ribs celery, chopped
  • 1 (14.5oz) canned diced tomatoes
  • 3 bay leaves, whole
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red peppers, (optional)
  • 1 cup chicken broth

RIce

  • 1 1/2 cups uncooked white long grain rice
  • 1 1/2 cups water
  • 1 1/2 cups chicken broth
  • 1 TBS butter

Instructions

  • In the bottom of a 6 quart crockpot place chicken. Top with sausage, onion, bell pepper, celery, tomatoes, broth, bay leaves, thyme, garlic powder, salt, & pepper.
  • Mix well. Place lid on crockpot and cook on high for 4 – 5 hours or low 6 – 8 hours until chicken is tender and cooked through.
  • 30 minutes before chicken is done, make rice on stove top. Place 1 1 /2 cups water, 1 1/2 cups chicken broth and 1 TBS butter into medium sauce pan over high heat. Bring to a boil. Add rice, stir, place lid on pot, and simmer for 20 minutes.
  • Pull out bay leaves (this is a very important step).
    After chicken is tender, shred on a cutting board and add back into crockpot, add cooked rice and stir to combine. The rice will absorb excess liquid in crockpot when allowed to sit for 5 minutes or so. Enjoy.
