Crockpot Steak Fajitas

Equipment

  • 1 large skillet
  • 1 6 quart crockpot/slow cooker

Ingredients

  • 2 lbs flank or chuck steak
  • 1 packet taco seasoning (or 3 TBS homemade taco seasoning blend) DIVIDED
  • 2 TBS avocado oil or other cooking oil
  • 4 medium bell peppers, all or 1 color, cut into thick strips
  • 2 medium yellow onions, sliced thick
  • 1/2 cup chicken broth or other broth flavor
  • 1 cup red salsa
  • flour tortillas
  • favorite toppings for fajitas

Instructions

  • Heat 2 TBS cooking oil in a large deep skillet over medium high heat. Season both sides of flank or chuck steak with only 2 TBS taco seasoning. Remaining 1 TBS will be used later in recipe.

  • Place steak into hot skillet and sear for 2-3 minutes until browned. Flip over and sear on the other side 2-3 minutes. Remove from skillet and place on cutting board. (If you have 2 pieces of steak, go ahead and sear the other one.
    Slice steak against the grain into 1 1/2 inch strips. Place all strips of steak into bottom of crockpot.
  • While skillet is still hot and has steak juices in it, add sliced peppers and onions and stir for a few minutes to char vegetables and absorb the juices from pan.
  • Place vegetables over the steak strips in the crockpot.
  • Add remainder 1 TBS taco seasoning, chicken broth, and salsa to crockpot. Stir everything well to coat.
  • Place lid on and cook for 6-8 hours on low or 4-5 hours on high until steak is fork tender. You can then just drain out the vegetables and steak from liquid and serve on flour or corn tortillas. Don't forget your favorite fajita toppings.
