Crockpot Taco Casserole

Ingredients

  • 1 lb ground beef, browned up
  • 1 can cream of onion soup
  • 2 cans rotel tomtoes with green chilis
  • 1 packet taco seasoning or 3 TBS homemade taco seasoning
  • 8 corn or white tortillas garnish
  • sour cream garnish
  • cheddar cheese shredded garnish
  • green onions garnish

Instructions

  • Place cooked ground beef, cream of onion soup, rotel tomatoes, and taco seasoning into crockpot, mix well. Place lid on and cook on low 6-8 hours or high 4-5 hours.
  • Cut tortillas into strips, place on a parchment lined baking sheet, drizzle with a little olive oil and sprinkle with salt. Place in 425 degree preheated oven for 10-15 minutes until desired crispness is obtained.
  • Once crockpot is done, spoon into a bowl and garnish with tortilla strips, sour cream, cheese, and green onions.
