Easy Hamburger Vegetable Soup with Tortellini

Ingredients

  • 1 1/2 - 2 lbs Ground Beef
  • 1 (12 oz) pkg frozen vegetables I used a mixed bag of green beans, corn, carrots, and peas
  • 4-6 cups Beef Broth I used the base "better than boullon" to make 6 cups of broth, or use boxed or canned.
  • 1 (17 oz) pkg tortellini, frozen any variety, I used 3 cheese
  • 1 (14 oz) can diced tomatoes
  • 1 onion, large dices
  • 1-2 tsp garlic minced
  • 1/4 tsp salt to taste
  • 1/4 tsp pepper, to taste
  • italian seasoning blend, to taste
  • 1-2 TBS cooking oil

Instructions

  • In a large pot heat up 1-2 TBS cooking oil on medium high. Add diced onion and sautee until soft and translucent about 3 minutes. Add minced garlic and cook for one minute.
  • Add ground beef and thoroughly brown. Drain off any excess grease.
  • Add in beef broth, diced tomatoes and seasonings. Bring to a boil.
  • Add in frozen vegetables and cook for 4-5 minutes at a simmer or slow boil. Taste for additional seasonings, if needed.
  • Add frozen tortellini and cook for 3-4 minutes or until pasta is tender and cooked through.
  • Enjoy.
