

Huevos Rancheros
Easy Timesaving Shortcuts to Make This Delicious Mexican Savory Breakfast.
Ingredients
- 4 tostada shells
The Best Refried Beans
- 1 can refried beans
- 2 TBS sour cream
- 1 TBS taco seasoning
- 1/3 cup picante sauce
- 1/4 cup water
- 1 squeeze lime juice (1 tsp)
Mexican Meat
- 1/2 (16oz pkg) Cooked Smoke Seasoned Pulled Pork
Fried Egg
- 4 large eggs
- 2-3 TBS cooking oil
- salt & pepper, to taste
Toppings
- avocaco, cilantro, pico, casa fresco, or other toppings you like.
Instructions
Making the Best Beans
- In a medium sauce pan stir together refried beans, sour cream, taco seasoning, picante, water, and lime juice. Heat over medium heat until heated through. Turn off heat.NOTE: these are faster than making the beans from a bag, and these ingredients make the best flavored beans for any Mexican dish that you make.NOTE: if you want your own big batch of taco seasoning, search in my search bar for it. You can't beat making your own homemade taco seasoning.
Heat Tostada Shells
- The tostada shells heat well in the microwave on a paper towel for 15 seconds.NOTE: these take the place of making your own flat shells and frying them up.
Simple Shortcut for the Cooked Meat
- Heat the pulled pork or other type of cooked seasoned meat through per instructions on package.NOTE: You can use carne asada, mexican chicken, carnitas, barbacoa, or other cooked seasoned meat. NOTE: This is a shortcut instead of slow cooking meat all day. NOTE: These cooked meats can be found in your grocery store near the rotisserie chickens.
Fry the Egg with a runny yolk
- For an authentic fried egg, use a small egg pan. Add oil to cover the bottom. Crack egg into a small dish and pour it into the pan. This will keep shells from entering pan. Season with salt & pepper. NOTE: use a spoon to pour oil in pan over the top of egg to cook the yolk and the white without flipping egg and keep the egg yolk cooked and still runny somewhat.
Let's Build
- Heat tostada in microwave on paper towel for 15 seconds, place on serving plate. Spread beans on the tostada to cover. NOTE: if you have someone who does not like refried beans you can place some shredded cheese (mexican blend or cheddar) on the tostada and heat in microwave to melt. The melted cheese will help hold on the ingredients (kind of like the beans hold on to ingredients).NOTE: you can also use canned black beans. Just cook them like the refried beans with the same ingredients and mash them up.
- Add heated cooked meat on top of the beans. Place 1 fried egg on top.
Add Toppings
- Place toppings on top. We put sliced avocado, cilantro, casa fresco cheese, and pico.NOTE: before you eat, bust the runny yolk to allow to drip down the Huevos Rancheros. Enjoy.
