Easy Mexican Impossible Pie

Ingredients

  • 1 lb Ground Beef
  • 1 Onion Diced
  • 1 TBS cooking oil
  • 1 pkt taco seasoning or 3 TBS homemade taco seasoning
  • 1 can corn, drained
  • 1 (4 oz) can diced green chilis
  • 2 shakes hot sauce, if desired
  • 3/4 cup bisquick baking mix
  • 1 1/4 cup milk
  • 3 large eggs
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup shredded cheddar cheese (or cheese of your choice)

Instructions

  • Preheat oven to 400 degrees and spray with non-stick cooking spray a 9 inch pie dish and set a side.
  • In a large skillet over medium high heat, add cooking oil and heat. Place diced onions in skillet and cook until softened. Add ground beef and cook until browned. Drain any excess grease.
  • To the cooked ground beef, stir in taco seasoning, corn, green chilis and hot sauce. Turn off burner. Add ground beef mixture into the prepared pie dish. Sprinkle with cheese to cover the ground beef.
  • In a medium bowl whisk together bisquick, milk, eggs, salt & pepper until well combined. Pour mixture over the cheese & ground beef in the pie dish.
  • Set pie dish on a baking sheet and place into middle of preheated oven for 30-35 minutes until the top is golden brown and the middle is set and does not giggle. Take out of oven and let sit for 5 minutes.
