Preheat oven to 400 degrees. Butter a 9 x 13 baking dish.
Pour 1 can of peaches with heavy syrup into prepared baking dish. Drain out heavy syrup from 2nd can of peaches and add the peaches to the baking dish.
Add 5 TBS melted butter, 1/4 cup sugar, 2 tsp lemon juice, and 2 tsp vanilla extract to the peaches in baking dish. NOTE: if using unsalted butter, you can add in a pinch of salt. Mix well until combined and peaches are all coated. Flip peaches until rounded side of halved peaches are facing down.
In a large whisk together 2 cups flour, 1 1/2 cups white granulated sugar, 2 tsp baking powder, 1 1/2 tsp ground cinnamon, 1/8 tsp ground nutmeg, and a pinch of salt.
Pour 1 cup melted butter into the flour mixture in large bowl and mix together with a fork until all combined and forms a crumb mixture.
Spoon crumb mixture on each of the peach halves to form a mound on top of each one. Sprinkle remaining mixture all on top.
Bake in preheated 400 degree oven for 15 minutes. Lower temperature of oven to 375 degrees. Bake cobbler an additional 45 minutes to 1 hour. (Keep an eye on it around the 35 minute time. Some ovens run hotter than others.) Remove from oven, serve warm with a scoop of vanilla ice cream or 2. Enjoy.
