Easy Peach Enchiladas

Ingredients

  • 1 (21 oz) can peach pie filling or any pie filling
  • 6-8 flour tortillas regular size
  • 2 tsp cinnamon
  • 1/3 cup butter
  • 1/2 cup Water
  • 1/2 cup brown sugar
  • 1/2 cup granulated white sugar

Instructions

  • Lightly spray a baking dish (9x13 size).
  • Place a tortilla on work surface. Spoon pie filling down middle of tortilla. Sprinkle with cinnamon.
  • Roll up tortilla and place seam side down in prepared baking dish.
  • In a medium skillet on high heat, melt butter and then add water and both sugars. After it comes to a boil, reduce heat and simmer for 3 minutes while stirring continuously. Turn off heat.
  • Pour mixture over enchiladas. Let sit for 30 minutes.
  • Place in 350 degree oven and bake for 20 -25 minutes until tortillas are golden brown.
  • Remove from oven and allow to rest for 5 minutes. Sprinkle cinnamon over top of enchiladas. Enjoy.
