French Toast Roll Ups
A fun and easy breakfast or brunch idea. Perfect for Mother's Day, Easter or any occasion.
Equipment
- medium skillet

- Rolling Pin
Ingredients
Mixture
- 3 TBS butter, melted
- 3 TBS white granulated sugar
- 2 TBS brown sugar
- 1/2 TBS ground cinnamon
Dredge
- 2 large eggs
- 1/4 cup milk
Coating
- 1 TBS white granulated sugar
- 1 tsp ground cinnamon
Other Ingredients
- 8 slices white bread, trim off crusts
- 3 TBS butter
- syrup, for serving
Instructions
- In a small bowl mix together 3 TBS melted butter, 3 TBS granulated sugar, 3 TBS brown sugar and 1/2 TBS cinnamon from the "MIXTURE" ingredients list. Set aside.
- In a shallow pie plate or bowl, whisk together 2 eggs and 1/4 cup milk. Set aside.
- In a small bowl whisk together 2 TBS granulated sugar and 2 tsp cinnamon from the "COATING" ingredient list. Set aside.
- Roll out each crustless bread slice to an 1/8 inch thickness using a rolling pin or side edge of a glass. Spread a small amount of the 'Mixture" onto each rolled out bread pieces and spread evenly across the whole slice.
- Roll each filled bread slice tightly.
- Over medium heat in a medium skillet heat 3 TBS butter to a sizzle. Dredge each roll up into the egg mixture and roll around to coat entirely. Place into skillet. Allow them to cook 1-2 minutes on each side until golden brown and crispy on the outside. Place cooked roll ups on a plate. Sprinkle with the "COATING" ingredients of sugar and cinnamon.
- Serve with syrup and a side of fresh fruit.
