Fresh Strawberries Frosted Cake

I make this simple with box cake mix, jello mix, and fresh strawberries. It's so moist and delicious. Mash the fresh strawberries into the cake batter and the frosting. Perfect for the summer.

Ingredients

Cake ingredients

  • 1 (16.25) oz box dry white cake mix
  • 1 (3.4) oz box dry strawberry gelatin
  • 1 cup melted butter
  • 1/2 cup milk
  • 4 large eggs
  • 1 cup mashed fresh strawberries with juice

Frosting

  • 1 stick butter, softened
  • 1 lb powdered sugar
  • 1/2 cup mashed fresh strawberries, drained

Instructions

  • Preheat oven to 350 degrees. Prepare 2 "9 inch cake pans (grease & flour) and set aside.
  • Clean, dry and take stems off of 2 lbs fresh strawberries. Place strawberries into a large bowl and mash thoroughly until very juicy and strawberries are broken into small pieces.
  • In a separate large bowl combine all cake ingredients using an electric hand mixer. Evenly place batter into both cake pans and spread evenly.
  • Bake in preheated oven for 35-40 minutes until cake are done. Remove from oven and allow to rest for 5 minutes in pans. Remove from pans and let cool on wire racks.

Frosting

  • In a large bowl add 1 stick softened butter and 1 cup of powdered sugar. Beat with electric hand mixer until incorporated. Add in rest of powdered sugar and beat again until incorporated. Add in 1/2 cup drained strawberries and mix well.
    NOTE: if frosting is loose, continue to add additional powdered sugar to thicken. If frosting is too thick, add additional strawberry juice. "CONSISTENCY should be thick enough to frost cake.
  • Once cakes are cool place a dab of frosting into center of cake dish and place one of the cakes upside down on top of cake dish. (The dab of frosting will aid in keeping the cake in place.)
  • Place 1/3 of the frosting on top of the cake and frost the top of cake. Place 2nd cake upside down on cake and place remainder of frosting on top of the cake. Spread evenly over top and sides of cake. Cut a piece and enjoy.
