

Fried Bologna Cornbread Sandwich
Oh yes you can! It's delicious.
Ingredients
Cornbread Sandwich
- 1 (8.5oz) box Jiffy Cornbread Mix
- 1 cup milk
- 1/2 TBS cooking oil
- 1 cup shredded cheddar cheese (DIVIDED)
- jalapeno slices (optional)
- 4 thick slices beef bologna (we've tried with thin slices also)
- 2 TBS cooking oil for frying bologna
- sandwich toppings (mayonnaise, lettuce, tomato, red onions, swiss cheese, or other toppings you desire)
Instructions
- Preheat oven to 425 degrees. Grease a 9 x 13 baking dish.
- In a large mixing bowl, mix together jiffy cornbread mix, milk, cooking oil, and 1/2 cup shredded cheddar cheese. Pour mixture into prepared baking dish and spread out thinly.NOTE: place sliced jalapenos on top of the mixture wherever you want them.
- Bake in preheated oven for 20-25 minutes until golden brown. Cool completely. Cut into sandwich slices.
- Add 1 TBS cooking oil to skillet and heat over medium high heat. Place sliced bologna in heated skillet and allow to cook until bologna is golden brown & crispy on edges. Flip over and cook again for same results.NOTE: thicker bologna works well.NOTE: people often say to make cuts to the bologna on the ends to help prevent it from curling up on you.
- Spread mayonnaise on one pieces of the cornbread slice and place the bologna, swiss cheese slice, tomato, lettuce, and red onion on top. Top with another piece of cornbread slathered with mayonnaise. Enjoy.
