Fried Meatloaf Sandwich

Equipment

  • large mixing bowl
  • wooden spoon
  • measuring spoons & cups
  • 9" x 5" x 3" pan
  • cutting board & sharp knife
  • large skillet

Ingredients

  • 1 lb ground beef
  • 1 cup panko or bread crumbs
  • 2 large eggs, slightly beaten
  • 1/2 cup milk
  • 1/8 cup dried parsley flakes
  • 1/2 medium yellow onion, diced
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup parmesan cheese, grated

Sandwich

  • soft white hoagie rolls
  • softened butter
  • barbeque sauce (your favorite)
  • French's crispy fried onions
  • cooking oil (olive or avocado)

Instructions

Meatloaf should be made and cooled over night in refrigerator for a solid formed loaf for frying.

  • Preheat oven to 350 degrees.
  • Place all of the meatloaf ingredients into a large mixing bowl. Mix well to combine. Place mixture into a 9" x 5" x 3" baking pan. Press down evenly.
  • Place meatloaf into preheated oven and bake for an hour until center of meatloaf is 165 degrees or more. Remove meatloaf from oven and allow to cool. Place in refrigerator overnight.
  • Remove chilled meatloaf from refrigerator and cut into slices.
  • Heat oil in a large skillet over medium high heat. Place slices of meatloaf into hot skillet. While the bottom of meatloaf slices starts to sear on the bottom, place 1-2 TBS of barbeque sauce on the tops of the slices and spread evenly.
  • Once the meatloaf slices get seared on the bottom, turn them over & cook an additional 3-4 minutes. Place 2-3 TBS on the tops of the seared meatloaf and spread evenly. Turn over once more for just 1 minute.
  • Remove meatloaf slices from pan onto a plate.
  • Start heating a medium skillet on medium heat. Butter the hoagie buns on the inside. Place butter side down into skillet and allow to get golden brown. Remove from pan.
  • Place a piece of the fried meatloaf on the inside of the buttered hoagie on the bottom. Squeeze barbeque sauce on top of the meatloaf. Top with crispy fried onions. Enjoy.
