Glazed Cheddar Stuffed Meatballs

Perfect little bites you can’t stop eating. So many great things about these meatballs. The cheddar is an amazing surprise inside and the glaze on the outside offers a nice little sweetness.

Glazed Cheddar Stuffed Meatballs

Ingredients

  • 2 lbs lean ground beef
  • 2 eggs
  • 1/2 cup panko or bread crumbs
  • 1/2 cup milk
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp papper
  • 1/4 cup dried parsley
  • 6 oz cheddar cheese, cubed

Glaze for top of meatball

  • 1/3 - 1/2 cup brown sugar
  • 4 TBS ketsup
  • 2 tsp mustard

Instructions

  • Preheat oven to 400 degrees. Place a cooling rack into a baking rack. I usually line the baking sheet with parchment paper for easier cleanup. Also make sure the baking sheet has a lip along the outside to keep the meatball juices inside the pan.
  • Mix all meatball ingredients in a large bowl except for the cheddar cheese. (ground beef, eggs, bread crumbs, milk, and seasonings)
  • Using a one inch scoop or TBS gently roll meatball mixture into a ball shape.
  • Take a cheddar cheese cube and press into center of meatball. Cover cheese completely. Place onto prepared rack.
  • Bake for 10 minutes.
  • While baking, combine the three ingredients for the glaze.
  • take meatballs out of oven and brush the glaze over all hte meatballs.
  • Place back in oven for another 10-12 minutes until no longer pink.
  • Let cool a few minutes and enjoy.
