I love the roasted vegetables with the pasta and Greek flavors. Pair this salad with gyros or chicken. Such a colorful dish.
Greek Pasta Salad with Roasted Vegetables
Ingredients
- 1 pkg pasta, cooked and cooled
- 1-1 1/2 zucchini, cut into bite size pieces
- 1-1 1/2 squash, cut into bite size pieces
- 1 onion, cut into bite size pieces
- olive oil
- salt & peppr to taste
- oregano, to taste
- 1/4 cup red wine vinegar
- 1 cup olive oil
- 1 TBS sugar
- salt, pepper, oregano, & thyme to taste
Instructions
- Preheat oven to 400 degrees. Place zucchini, squash, and onion on to a baking sheet. Sprinkle with olive oil, salt, pepper, and oregano to taste. Bake for 10-15 minutes, until softened.
- In a medium bowl place vinegar, 1 up olive oil, sugar, salt, pepper, oregano & thyme to taste. Mix well. Add pasta and roasted vegetables. Mix well. Chill before eating. Enjoy.
