Ground Turkey, Potato & Kale Soup

Ingredients

  • 2 TBS butter
  • 1 TBS oil
  • 2 celery stalks diced
  • 2 carrots diced
  • 1 Onion diced
  • 1 lb Ground Turkey
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tsp dried parsley
  • 1/4 tsp dried sage
  • 1 tsp Salt
  • 1 tsp pepper
  • 1 TBS minced garlic
  • 6 cups Chicken Broth
  • 2 cups baby kale or kale
  • 2 potatos peeled & diced.
  • Parmesan cheese for garnish

Instructions

  • In a large soup pot, heat butter & oil on medium heat. Add celery, onions & carrots. Cook for 2-3 minutes.
  • Add ground turkey and brown. Add seasonings and stir to mix well.
  • Add potato and kale. Stir well.
  • Add chicken broth, stir to mix well. Bring to a boil. Lower heat & simmer for 15-20 minutes until potatoes are cooked through.
  • Add parmesan for garnish. Enjoy.
