Ground Turkey, Potato & Kale Soup

- 2 TBS butter
- 1 TBS oil
- 2 celery stalks diced
- 2 carrots diced
- 1 Onion diced
- 1 lb Ground Turkey
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 1 tsp dried parsley
- 1/4 tsp dried sage
- 1 tsp Salt
- 1 tsp pepper
- 1 TBS minced garlic
- 6 cups Chicken Broth
- 2 cups baby kale or kale
- 2 potatos peeled & diced.
- Parmesan cheese for garnish
In a large soup pot, heat butter & oil on medium heat. Add celery, onions & carrots. Cook for 2-3 minutes.
Add ground turkey and brown. Add seasonings and stir to mix well.
Add potato and kale. Stir well.
Add chicken broth, stir to mix well. Bring to a boil. Lower heat & simmer for 15-20 minutes until potatoes are cooked through.
Add parmesan for garnish. Enjoy.
