Hash Brown Patties Breakfast Casserole

Equipment

  • 9 x 13 baking dish

Ingredients

  • 1 box (9 ct) precooked, frozen hash brown patties
  • 1 lb uncooked breakfast sausage (I use a Jimmy Dean Maple variety)
  • 1 medium green bell pepper, diced (or any color pepper)
  • 1 medium yellow onion, diced
  • 1 TBS butter
  • 1 TBS cooking oil
  • 1 1/2 – 2 cups shredded cheddar cheeses or other flavor
  • 9 large eggs
  • 1/2 cup heavy cream, half n half or milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 green onions, sliced for garnish, if desired

Instructions

  • In a large skillet over medium high, heat butter and oil. Add in peppers and onions and cook until softened. Break up uncooked sausage into skillet and cook until browned.
  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Lay out 9 frozen hash browns in bottom of baking dish in one layer.
  • Spoon cooked sausage, peppers and onions over the hash browns evenly.
  • Sprinkle 1 1/2 – 2 cups of shredded cheese over the sausage, peppers, and onions.
  • In a large bowl whisk together eggs, milk, salt, pepper, and garlic powder. Pour egg mixture over cheese in baking dish.
  • Place foil over baking dish tightly. Bake in preheated oven for 25 minutes. Remove foil and bake an additional 20 minutes until eggs are set, cheese has melted and is golden brown. Let sit on counter for 5-10 minutes to set up.
  • Garnish with sliced green onions, if desired. Enjoy.
