King’s Hawaiian Roll Egg Cups

Equipment

Ingredients

  • 1 (12 ct) package King's Hawaiian Sweet Rols
  • 8 oz jimmy dean sausage
  • 1/2 cup bell peppers, diced (multi color)
  • 1/4 cup butter, melted
  • 8 oz shredded cheddar cheese (DIIVDED)
  • 6 large eggs
  • 2 TBS milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 green onions, sliced

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
  • In a medium skillet break up sausage and add bell pepper. Cook until sausage is no longer pink and peppers are softened.
  • In a medium bowl whisk together eggs, milk, salt, and black pepper.
  • Place King's Hawaiian rolls together in a prepared 9 x 13 baking dish. Using a steak knife cut off the tops of each roll very close to the edges of the rolls. Cut 3/4 of the way down to the bottom. Pull out the top and center. Leaving a nice size space for mixture.
  • Baste tops, sides and insides of rolls with melted butter.
  • Sprinkle one TBS cheese in bottom of each roll. Fill each roll with sausage and peppers. Pour egg mixture into each roll. As you are pouring egg mixture it will seep into the roll. Sprinkle additional cheese on top of each roll.
  • Bake in preheated oven for 30 minutes until golden brown and eggs are set. Top with green onions as a garnish. Enjoy.
