Holiday Mini Cake Bites using Nilla Wafers

Equipment

  • large sheet pan lined with parchment
  • cookie rack
  • small pan
  • double boiler (medium sauce pan and bowl to fit)
  • spoons
  • spatula
  • basting brushes

Ingredients

  • 36 Nilla Wafers (DIVIDED)
  • 2 TBS orange juice
  • 6 oz strawberry jam or preserves
  • 1 1/2 cups white candy wafers (or white morsel chips)
  • assorted decorations (sprinkles, candies, red & green icings)

Instructions

  • Lay out 24 nilla wafers flat side up on a sheet pan lined with parchment paper in a single layer. Brush orange juice on the flat side of each nilla wafer lightly using a basting brush.
  • Spread 1 tsp of strawberry jam on each orange juice brushed nilla wafer.
  • Place the remaining 12 nilla wafers rounded side up in a small pan in a single layer. Take one strawberry jam topped wafer from the sheet pan and place it jam side down onto one of the wafers in the small pan. Take another jam topped wafer and place it jam side down on top.
    NOTE: you should have a nilla wafer, jam, nilla wafer, jam, and nilla wafer to form one mini cake. Complete the rest until you have 12 mini cakes.
  • Freeze the small pan of 12 mini cakes for 2-3 hours until they are set up solid.
  • Double Boiler Method: Place a medium sauce pan over medium high heat. Fill with water 1/4 of the way. Place a medium or large bowl over pot that will fit without touching the water in the pot.
    Once water comes to a boil, add white morsels or white candy wafers. Hold bowl with a small towel to hold in place and stir the morsels/wafers with a spatula continually until melted and smooth. Turn down heat to a low.
  • Microwave Method: Place morsels or white candy wafers into a medium microwave safe bowl. Place in microwave for 15 seconds. Stir and place back in microwave for another 15 seconds, then stir. Continue until morsels or melted and smooth.
  • Take 3 mini cakes out of freezer. Dunk each mini cake into coating and using a spoon cover completely. Take it out and rest on a wire rack on a sheet pan lined with parchment or foil. Once these 3 mini cakes are covered. Remove 3 more from freezer.
  • Before the coating on mini cakes set up, sprinkle some fun holiday sprinkles on them. To ice them using cookie icing let mini cakes set up completely then drizzle with icing.
    Place back in freezer while completing the rest. It should take 30 minutes to set up the coating on the mini cakes. Place on a decorative plate and enjoy.
