Humpty Dumpty Appetizer Dip

Ingredients

  • 6 large hardboiled eggs, peeled
  • 1/2 block (4oz) cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/2 tsp white vinegar
  • 1 tsp yellow mustard
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • pinch ceyenne pepper (optional)
  • 1 tsp paprika
  • fresh chives

Instructions

  • Hard boil eggs using your method. Cool eggs in a bowl of ice water. Peel eggs and dry off.
  • Place 3 of the hard boiled eggs & the yolks from the remaining 3 hard boiled eggs into a food processor along with cream cheese, mustard, mayonnaise, vinegar, salt, black pepper, and paprika. Blend until you get a smooth consistency.
    NOTE: Save the egg whites from the 3 eggs for another part of recipe.
  • Place egg mixture into a medium bowl.
  • Chop the remaining 3 egg whites and fold into the egg mixture. Snip in a handful of chives and fold into mixture. Give the mixture a try and adjust any seasonings.
  • Place mixture onto a serving plate and dust with paprika and extra snips of chives. Serve up with crackers, carrots, celery, or pretzel crisps.
