Italian Pasta Salad with Tortellini
A Delicious Summer Salad Italian Style with Tortellini and Chicken. Don't forget the tasty Homemade Italian Dressing.

Ingredients
- 1 (16oz bag) refrigerated cheese tortellini, cooked in salted water per package directions, drained, cooled
- 2 cups shredded cooked chicken (baked, boiled, or rotisserie style) I love to use my oven baked chicken recipe. Use search bar above to locate recipe.
- 1 cup chopped sweet and/or bell peppers (use as many colors as possible for a summery look)
- 1/2 cup whole black olives, drained
- 8 oz mozzarella cheese cut into bite size pieces
- 2 tomatoes, chopped into bite size pieces (you can use cherry tomatoes and leave whole)
- 3-4 green onions, chopped
- 20 slices pepperoni cut in halves
- 10 slices salami cut into halves or quarters
- 1/2 cucumber peeled and cut into bite size pieces
- 6-8 whole pepperoncini's
My Homemade Italian Dressing
- 3/4 cup olive or avocado oil
- 1/4 cup apple cider vinegar
- 1-2 TBS lemon juice
- 1/4 cup parmesan cheese, shredded
- 1 tsp each dried parsley, basic, garlic powder, onion powder
- 1/2 tsp each salt, oregano, paprika, black pepper
- 2-3 tsp sugar
Instructions
- In a large serving bowl place cooked tortellini, cooked chicken, chopped vegetables, chopped meats, and cheese.
- Whisk all "My Homemade Italian Dressing" ingredients together in a medium bowl and pour over pasta salad ingredients.
- Mix all salad ingredients and Italian dressing together. Cover and refrigerate until ready to serve. Enjoy.
