Orange Jack-O-Lantern Stuffed Bell Peppers

Perfect Meal for Fall or Halloween. Stuffed with a chicken fajita mixture.

Equipment

  • large pot
  • medium pot with lid
  • cutting board & sharp paring knife
  • measuring cups & spoons
  • large mixing bowl
  • 9 x 13 baking dish

Ingredients

  • 4 large orange bell peppers
  • 1 cup water
  • 1 cup chicken broth
  • 1 cup uncooked long grain white rice
  • 1 1/2 cups diced cooked chicken (I use rotisserie chicken)
  • 1 (14 oz) can diced tomatoes (drained)
  • 1 (4 oz) can chopped green chilis
  • 3 TBS taco seasoning (or 1 packet)
  • 1/2 cup chicken broth
  • salt & pepper (to taste)
  • 1 cup shredded mexican blend cheese

Instructions

  • Preheat oven to 375 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray and set aside.
  • Fill a large pot of water 1/2 way. Place on burner over high heat and bring to a boil.
  • In the mean time, Place 1 cup of water, and 1 cup of chicken broth in a medium pot and bring to a boil. Add 1 cup of rice. Turn burner to low setting. Place lid on pot and cook rice for 20 minutes. Turn off burner and fluff rice.
  • Wash & dry orange peppers. Using a sharp paring knife cut off the tops of the peppers and save off to the side. Cut around the seed pocket inside of the peppers and pull out. Remove any excess membrane from inside of peppers.
  • Using the paring knife cut small triangles on center of peppers to resemble triangle shaped eyes. Cut out a nose triangle shape. Then cut out a jagged mouth.

  • Place peppers and the tops into boiling water and allow peppers to soften partway for 5 minutes. Turn off heat. Pull out peppers and drain on paper towels.
  • In a large mixing bowl place chicken, rice, tomatoes, green chilies, chicken broth, taco seasoning, cheese, and salt & pepper to taste. Mix well to combine.
  • Place a layer of chicken mixture into bottom of prepared baking dish. (This will help keep the peppers standing up, also you will have extra filling and this is a good place for it.)
  • Fill the peppers with the rest of mixture to the top and place the peppers on top of the filling in baking dish. Place the top of peppers on top of the filling.
  • Bake in preheated oven for 15-20 minutes until mixture is heated through and cheese is melted in mixture. Serve up on a plate with extra filling for baking dish.
