Jiffy Corn Muffin Mix Meatloaf

A very delicious, moist way to make meatloaf with corn muffin mix. Adds a sweetness to it that you've never had before.

Equipment

  • large mixing bowl
  • large sheet pan or 2 meatloaf pans

Ingredients

Meatloaf Ingredients

  • 2 lbs ground beef
  • 1 large egg, beaten
  • 1 (5oz) can evaporated milk
  • 1/2 cup milk
  • 1/2 cup ketchup
  • 1/4 cup stone ground dijon mustard
  • 1 medium yellow onion, diced fine
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic, minced
  • 2 tsp Worcestershire Sauce
  • 1 box Jiffy Corn Muffin Mix (8.5oz)

Topping

  • 1/2 cup ketchup
  • 2 tsp stone ground dijon mustard

Instructions

  • Preheat oven to 350 degrees. Line with foil and spray a large sheet pan with non-stick cooking spray. (NOTE: you can also use 2 meatloaf pans sprayed with cooking spray.)
  • In a large bowl, place all meatloaf ingredients and mix well.
  • Free form meatloaf onto foil lined pan or divide mixture between two meatloaf pans.
  • Bake in preheated oven for 1 hour. In the meantime mix together the topping ingredients of ketchup and mustard.
  • Coat the top of the meatloaf with the topping mixture and place back in oven for 15 minutes or until meatloaf is cooked through. Let meatloaf rest on stove top for 5 minutes before slicing. Enjoy.
