Lemon Snowdrops Cookie

Buttery Lemon Filling Sandwiched Between 2 crispy butter cookie rounds.

Equipment

  • stand mixer with paddle attachment & bowl
  • measuring cups & spoons
  • 2 large sheets lined with foil
  • 1 separate teaspoon
  • Medium sauce pan
  • whisk, spatula,
  • medium narrow dish

Ingredients

Cookie Rounds

  • 1 cup salted butter, softened (2 sticks)
  • 1/2 cup powdered (confectioners) sugar
  • 1 tsp lemon extract
  • 2 cups all-purpose flour
  • 1/8 tsp salt (if using unsalted butter use 1/4 tsp)

Lemon Butter Filling

  • 1/2 cup white granulated sugar
  • 2 TBS cornstarch
  • pinch of salt
  • 1/2 cup water
  • 2 TBS butter
  • 2 tsp grated lemon peel
  • 2 TBS lemon juice
  • 3 drops yellow food coloring

Instructions

Cookie Rounds

  • Heat oven to 400 degrees. Line 2 baking sheet pans with parchment.
  • In the bowl of a stand mixer add in 1 cup softened butter, 1/2 cup powdered sugar, and lemon extract. Mix thoroughly using the paddle attachment for the stand mixer until the butter has lightened up and is airy.
  • Add in flour & salt. Mix batter again until just combined. batter should be thick and holds it's shape.
  • Using a 1 tsp to measuring out dough, roll into ball shapes and place 1/2 inch a part on sheet pans. Flatten cookie slightly (should be the size of a half dollar coin) using a piece of parchment.
  • Bake in preheated oven for 8-10 minutes until golden on edges. Remove from oven and immediately remove from pan onto a wire rack to cool completely.

Lemon Butter Filling

  • In a medium sauce pan mix together white granulated sugar, corn starch, and salt. Turn burner onto a medium heat. Slowly add in water until combined. Stir continuously until mixture comes to a boil and has thickened. Stir another 30 seconds then remove from heat.
  • Stir in butter until melted and combined into mixture. Stir in lemon zest. Stir in lemon juice & food color. Place in refrigerator until chilled.

Build Lemon Snowdrops

  • Spoon 1 tsp of chilled lemon butter filling onto flat side of 1 cookie. Place another cookie flat side down onto the mixture to create a cookie sandwich.
  • Roll cookie sandwich into powdered sugar to fully coat. Place onto a plate. Finish the rest.
