Preheat oven to 350 degrees. Place stick of butter in a 9" x 9" baking dish and place in preheated oven for 4-6 minutes until completely melted. Remove from oven and set aside. NOTE: leave oven on the 350 degrees to bake cobbler. In a medium bowl whisk together flour, baking powder, and salt. Add in sugar and whisk again.
Pour in butter milk, vanilla extract, and lemon extract. Mix together with a spatula. Don't over mix.
Pour the batter over the melted butter in baking dish. DO NOT MIX IN.
Spoon the lemon pie filling over the batter leaving spaces between so the cobbler can bake through. DO NOT MIX IN.
Bake in preheated oven for 45-55 minutes until golden brown, edges have pulled away from dish and the edges are crispy.
Allow to cool for a few minutes. Serve with vanilla ice cream, whipped topping, extra lemon juice, or a drizzle of honey. Enjoy.

Just made this magic lemon cobbler . . and I have a question. My “cobbler” batter was very soupy, not as thick as yours, so I dumped my first attempt and tried again . . still soupy, but I went with it. When I poured it into the melted butter, the dough sank to the bottom, pushing the melted butter to the top. The lemon pie filling stayed somewhat on the top. It’s in the oven now. Is it possible the dry ingredient measurements are not correct?
