Pumpkin Magic Cookie Bars
Another delicious and fun way to use pumpkin this season. I hope you enjoy.
Equipment
- 9 x 11 baking dish (You can use a 9 x 13 baking dish, the crust will be thinner.)
Ingredients
- 1 TBS butter (to grease baking dish)
Bottom Layer Crust
- 1/2 cup butter melted
- 1 1/2 cups graham crackers crumbs
Pumpkin Mixture
- 1/3 cup 100% pure pumpkin puree (canned)
- 1 (14oz) can sweetened condensed milk
- 1 tsp pumpkin pie spice blend
Toppings
- 1 cup chocolate chips (I used semi-sweet)
- 1 cup butterscotch chips
- 2 cups chopped nuts (I used 1/2 pecans and 1/2 walnuts)
Instructions
- Preheat oven to 350 degrees. Butter a 9 x 11 baking dish. (If you use a 9 x 13 baking dish the cookie bars will be thinner.)
- In a medium bowl mix together melted butter and graham cracker crumbs. Pour into bottom of prepared baking dish and press evenly.
- In another medium bowl whisk together pumpkin puree, condensed milk, and pumpkin pie spice blend. Pour mixture onto graham cracker crust evenly.
- Sprinkle chocolate chips, butterscotch chips, pecans, and walnuts evenly over the pumpkin mixture. (You can use any flavored chips, coconut, and other types of nuts.)
- Bake for 25 -30 minutes until pumpkin mixture is set. Sprinkle more chips and nuts on top, if desired. Allow to cool before slicing into bar shapes.
