I love cleaning out my veggie drawer or pulling veggies out of my garden for this dish. Oh my goodness. What they do for these mini meatloaves. Adds a wonderful flavor and texture, keeping it Simple, Easy, and Delicious.
Mini Ground Beef & Veggie Meatloaves
Ingredients
- 1 LB Ground Beef
- 2 Slices Bread broken up
- 1/3 Cup milk
- 1 Egg
- 1 Red Onion diced
- 2 Cups Vegetables diced (squash, peppers, carrots, and zucchini)
- 1/2 Bag 3 oz Fresh Spinach
- 1/2 tsp garlic minced
- 1/2 tsp Salt
- 1/2 tsp pepper
- 1/2 tsp Paprika
Instructions
- Preheat oven to 350 degrees.
- In large bowl combine ground beef, egg, milk, and bread.
- Add salt, pepper, and paprika.
- Make a well in center of mixture.
- Heat a skillet on medium heat and add a drizzle of olive oil.
- Add vegetables and sautee until tender, add garlic and spinach, finish sautéing until spinach is wilted.
- Pour vegetable mixture into the well of meat mixture and combine loosely.
- Spray a muffin tin with cooking spray.
- Using a 1/3 measuring cup, scoop mixture into the individual muffin tin cups.
- Place in oven for 35 minutes until cooked through.
- Serve and Enjoy!
