Mini Veggie Meatloaves

I love cleaning out my veggie drawer or pulling veggies out of my garden for this dish.  Oh my goodness.  What they do for these mini meatloaves.  Adds a wonderful flavor and texture, keeping it Simple, Easy, and Delicious.

Mini Ground Beef & Veggie Meatloaves

Ingredients

  • 1 LB Ground Beef
  • 2 Slices Bread broken up
  • 1/3 Cup milk
  • 1 Egg
  • 1 Red Onion diced
  • 2 Cups Vegetables diced (squash, peppers, carrots, and zucchini)
  • 1/2 Bag 3 oz Fresh Spinach
  • 1/2 tsp garlic minced
  • 1/2 tsp Salt
  • 1/2 tsp pepper
  • 1/2 tsp Paprika

Instructions

  • Preheat oven to 350 degrees.
  • In large bowl combine ground beef, egg, milk, and bread.
  • Add salt, pepper, and paprika.
  • Make a well in center of mixture.
  • Heat a skillet on medium heat and add a drizzle of olive oil.
  • Add vegetables and sautee until tender, add garlic and spinach, finish sautéing until spinach is wilted.
  • Pour vegetable mixture into the well of meat mixture and combine loosely.
  • Spray a muffin tin with cooking spray.
  • Using a 1/3 measuring cup, scoop mixture into the individual muffin tin cups.
  • Place in oven for 35 minutes until cooked through.
