No Bake Cheesecake Parfaits

Equipment

  • mixing bowls
  • small clear dessert cups
  • electric hand mixer or whisk
  • spatula
  • piping or ziploc bag
  • plastic wrap

Ingredients

Strawberry Layer

  • 2 cups fresh diced strawberries
  • 1 TBS white granulated sugar
  • 1 tsp lemon juice

Cookie Layer

  • 13 graham crackers, crushed
  • 4-6 TBS melted butter

Cheesecake Layer

  • 8 oz block cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/4 cup white granulated sugar
  • 1 tsp vanilla extact

Instructions

  • Rinse and cut tops off of strawberries. Dice enough strawberries to measure 2 cups.
  • Place diced strawberries into a medium mixing bowl. Mix in 1 TBS granulated sugar and 1 tsp lemon juice. Set aside.
  • In another medium bowl crush about 13 graham crackers into crumbs. Add in 4-6 TBS melted butter and stir with a fork until it looks like wet sand.
  • In a large mixing bowl beat softened cream cheese using an electric hand mixer until smooth. Add in 1 cup heavy whipping cream, 1/4 cup granulated sugar and 1 tsp vanilla extract. Beat until soft peaks form.
  • Place cream cheese mixture into a piping bag or ziploc bag and cut a whole at the bottom for piping.
  • Place a layer of cookie crumb into bottom of a small clear dessert glass. Spoon in a layer of diced macerated strawberries. Pipe in a layer of cream cheese mixture.
  • Repeat again with cookie crumb, strawberries and cream cheese mixture.
  • Top with cookie crumb and a whole strawberry. Complete the other 3.
  • Cover the 4 glasses with plastic wrap and chill in refrigerator for at least 1 hour to set up and enhance flavors together. Enjoy.
