

No Bake Cheesecake Parfaits
Such a cool refreshing dessert. Easy No Bake layered recipe.

Equipment
- mixing bowls
- small clear dessert cups
- electric hand mixer or whisk
- spatula
- piping or ziploc bag
- plastic wrap
Ingredients
Strawberry Layer
- 2 cups fresh diced strawberries
- 1 TBS white granulated sugar
- 1 tsp lemon juice
Cookie Layer
- 13 graham crackers, crushed
- 4-6 TBS melted butter
Cheesecake Layer
- 8 oz block cream cheese, softened
- 1 cup heavy whipping cream
- 1/4 cup white granulated sugar
- 1 tsp vanilla extact
Instructions
- Rinse and cut tops off of strawberries. Dice enough strawberries to measure 2 cups.
- Place diced strawberries into a medium mixing bowl. Mix in 1 TBS granulated sugar and 1 tsp lemon juice. Set aside.
- In another medium bowl crush about 13 graham crackers into crumbs. Add in 4-6 TBS melted butter and stir with a fork until it looks like wet sand.
- In a large mixing bowl beat softened cream cheese using an electric hand mixer until smooth. Add in 1 cup heavy whipping cream, 1/4 cup granulated sugar and 1 tsp vanilla extract. Beat until soft peaks form.
- Place cream cheese mixture into a piping bag or ziploc bag and cut a whole at the bottom for piping.
- Place a layer of cookie crumb into bottom of a small clear dessert glass. Spoon in a layer of diced macerated strawberries. Pipe in a layer of cream cheese mixture.
- Repeat again with cookie crumb, strawberries and cream cheese mixture.
- Top with cookie crumb and a whole strawberry. Complete the other 3.
- Cover the 4 glasses with plastic wrap and chill in refrigerator for at least 1 hour to set up and enhance flavors together. Enjoy.
