One Pan Chicken Fajitas

The flavors in these fajitas are so refreshing using my homemade taco seasoning, orange juice, lime juice, and garlic to marinate the chicken.  Cooking this all on one pan makes for easy prep work.

One Pan Chicken Fajitas

Ingredients

  • 1 lb chicken beasts sliced
  • 2 bell peppers any color, cut into strips
  • 1 1/2 onions any color, cut into strips
  • 3/4 cup orange juice
  • 1/4 cup lime juice
  • 3 TBS taco seasonings
  • 2 TBS minced garlic
  • 2 TBS avocado oil
  • shredded cheese, crema, diced tomatoes, cilantro, shredded cabbage toppings

Instructions

  • Making marinade (place orange juice, lime juice, garlic, and taco seasoning into a Ziploc bag and mix well.
  • Place chicken into zipoc bag and mix well with marinade.
  • Place in refrigerator for 1-3 hours.
  • Preheat oven to 400 degrees.
  • Place oven pan into heated oven for 8-10 minutes.
  • Take pan out of oven and place strip of peppers and onions onto pan. Drizzle avocado oil onto vegetables. (I also add the left over limes cut into quarters. These were the ones I squeezed the juice out of for the marinade.)
  • Sprinkle 1 TBS of taco seasoning onto vegetables and mix well.
  • Place pan into oven for 10-12 minutes to soften up the vegetables and give a little color.
  • Take out of oven. Add marinated chicken onto pan and mix well with the vegetables.
  • Place back to oven for 20-25 minutes until chicken is cooked. (5 minutes before chicken is done, place tortillas onto an aluminum foil sheet and put in oven to warm up.
  • Take chicken fajitas and tortillas out of oven.
  • Build fajitas and Enjoy!
