One Pot Sloppy Joe Ground Beef & Rice
Delicious weeknight meal.

Ingredients
- 1 lb ground beef
- 1 medium yellow onion, diced
- 1 medium green bell pepper, diced
- 2 cup chicken broth
- 1/4 cup water
- salt & pepper, to taste
- 1 cup uncooked white long grain rice
- 1/2 cup ketchup
- 2 tsp Worcestershire sauce
- 1 TBS brown sugar
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 cups shredded cheese
Instructions
- In a large deep skillet over medium high heat, brown ground beef. Drain excess grease. Add in onion & bell pepper, cook until softened.
- Add in chicken broth and water. Season with salt & black pepper, to taste. Bring to a boil. Stir in rice. Place a lid on skillet, lower heat to a low setting, cook for 20 minutes until rice is tender and liquid has cooked out.
- Stir in ketchup, seasonings, Worcestershire, mustard, and brown sugar. Simmer for 4-5 minutes to blend all flavors. Turn off heat.
- Top with cheese. Place lid on to allow cheese to melt. Sprinkle dried parsley on top and enjoy.
