In a large skillet heat oil over medium high heat. Add diced onion and cook until softened and lightly browned.
Add ground beef and brown thoroughly.
Add in spices (chili powder, cumin, onion powder, garlic powder, salt & pepper) and stir to combine for 1 minute.
Pour in water, chicken broth, and tomatoes. Stir. Turn heat to "high" and bring to a simmer.
Add uncooked pasta, stir to combine. Lower heat to a medium and place lid on. Cook for 9-12 minutes. Stir every few minutes to prevent sticking to bottom of pan. Check pasta also. (If you feel you need more liquid you can add at this point.)
Once pasta is cooked tender, turn off heat. Sprinkle cheese over dish and mix to combine. Enjoy.
