One Skillet Italian Ground Beef & Rice 30 Minute Meal

Ingredients

  • 1 lb ground beef
  • 1 TBS olive oil, or cooking oil
  • 1 1/2 tsp garlic minced
  • 1 onion diced
  • 2 cups beef broth
  • 1 1/2 cups frozen peas & carrots
  • 1 cup diced tomatoes canned
  • 2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1 cup uncooked long grain rice (I used basmati)
  • 2 cups mozzarella cheese, shredded
  • fresh parsley to garnish

Instructions

  • In a large skillet on medium high heat, saute diced onion for 2 minutes until lightly browned and softened. Add garlic and cook for 1 additional minute. Add ground beef and brown thoroughly. Drain any excess grease.
  • Turn burner up to high heat. Add beef broth, diced tomatoes, peas & carrots, Italian seasoning, salt & pepper, uncooked rice. Stir to combine and bring to a boil.
  • Lower heat to Low, place lid on skillet and cook for 20 minutes until rice is tender.
  • Turn off burner. Sprinkle cheese over entire dish. Place lid back on skillet to melt cheese.
  • Sprinkle with parsley and enjoy.
