In a large skillet on medium high heat, saute diced onion for 2 minutes until lightly browned and softened. Add garlic and cook for 1 additional minute. Add ground beef and brown thoroughly. Drain any excess grease.
Turn burner up to high heat. Add beef broth, diced tomatoes, peas & carrots, Italian seasoning, salt & pepper, uncooked rice. Stir to combine and bring to a boil.
Lower heat to Low, place lid on skillet and cook for 20 minutes until rice is tender.
Turn off burner. Sprinkle cheese over entire dish. Place lid back on skillet to melt cheese.
Sprinkle with parsley and enjoy.
