Hello everyone and welcome back to Katherine's Plates. Do I have one for you today? I'm going to show you how to
0:06
make cinnamon sugar doughut bread. And you know I have someone excited for this
0:12
one in the house. It's as simple as these ingredients right here. And a loaf
0:18
pan, which that would be perfect if you wanted to get some loaf pans, make these up and give them out to your friends and
0:25
family for the holidays. Yeah. put that on your dessert table for Thanksgiving or make it for breakfast to get
0:32
everybody started before the turkey. Okay, I'm going to bring y'all up here
0:38
and let's go ahead and get started. First thing we're going to do is grease our loaf pan. I'm using a 9x5x
0:46
3 in. This is ceramic and you can use any kind you have. You just want to make
0:52
sure you spray really good the sides and the bottom.
1:00
We're going to set that aside. In a large mixing bowl, we're going to add one cup of white granulated sugar.
1:18
To that we're going to add 1/4 cup of softened
1:23
butter or four tablespoons.
1:34
We're going to add 1/4 cup of canola oil.
1:44
We're going to whisk this together.
1:50
You want to make sure that it's well incorporated. We're going to crack in two eggs.
2:16
We're going to add in one teaspoon of vanilla.
2:28
We're going to mix this until it's nice and smooth.
2:36
Want to make sure all the eggs are incorporated into the mixture.
2:43
Okay, now that we got a good mix on this, we're going to set it aside. We're just going to go ahead and whisk together some dry ingredients that we
2:50
can add. 1 and 1/2 cups of allpurpose flour.
3:07
Who doesn't love a good cinnamon swirl doughnut, right?
3:13
Okay, we're going to add 1 teaspoon of baking powder.
3:26
And then we're going to add half a teaspoon of salt.
3:32
I'm going to get a different whisk. Just kind of blend this together. It kind of airrates it, gets it all well
3:39
incorporated. What we're going to do now is take half
3:46
of our flour mixture. We're going to add it to the wet ingredients.
3:54
We're going to take some buttermilk. Now, I have half a cup of buttermilk, and we're going to put half of this into
4:01
our mixture. And then we're going to blend that all
4:07
together.
4:13
And just use a whisk. It's great. We don't have to bring out our stand mixer or our electric hand mixer for this.
4:22
Just a whisk. We're going to put in the rest of the flour mixture.
4:35
the other half of the buttermilk. Now, if you don't have buttermilk,
4:41
there's a substitution. You can put half of a tablespoon of
4:46
lemon juice into your measuring cup and then fill it up with regular milk up to
4:51
the half cup on your measuring cup. Stir it and then let it sit for five minutes.
4:57
And then you have buttermilk for this recipe. All right, let's go ahead and get this incorporated.
5:04
You don't want to over stir, just until it's well combined.
5:11
Bring over a small bowl. What you want to do with the batter is pull out half a cup and we're going to put it into a
5:17
separate small bowl. That way we can jazz it up.
5:25
To that, we're going to add half a teaspoon of ground cinnamon.
5:33
And we're going to add half a teaspoon of some dark corn syrup.
5:40
If you don't have that, you can use molasses or you can even use honey. It's
5:45
just a little sweetener. We're going to blend that all together.
5:52
It'll give a nice color, too, if you use the dark molasses or dark corn syrup.
6:01
We're going to place half of the batter into our loaf pan
6:10
and just kind of estimate.
6:16
I'm just going to smooth it out. We're going to dollop half of the other
6:21
mixture that has the cinnamon in it on top of the batter.
6:33
Place the rest of the batter on top of the cinnamon mixture.
6:40
Make it nice and even. Dollop the rest of the cinnamon mixture
6:46
on top. Tell you, it smells good.
6:52
We're going to take a butter knife and swirl. Go down to all the layers. Just create a swirl technique. All right.
7:00
Look at that. Okay, my oven is preheated at 350°. We're going to place our cinnamon sugar
7:07
doughut bread in for 45 to 50 minutes. You want to be able to put a toothpick
7:14
through the center and have it come out clean. There's still some more fun that's going to happen to give it that
7:20
delicious coating. Oh, you wish we were done. Not quite yet. I've got two bowls
7:28
set here. I'm going to show you what we're going to do while we let this rest for 10 minutes.
7:37
In one bowl, we're going to add one stick of melted butter.
7:44
All right, that'll cool down.
7:50
In another shallow dish, now I'm using pie plates. We're going to add 1/4 cup
7:57
brown sugar, 1/4 cup of white granulated sugar, and half a teaspoon of ground
8:02
cinnamon. Just going to whisk this together. You
8:08
can use a fork or a small whisk till it's well combined. The cake has cooled
8:14
for 10 minutes inside of the loaf pan. I just took a small spatula just going
8:19
around the edges. Make sure that it pops out good.
8:24
Now, what we're going to do is very gently we're going to tip it out of the dish.
8:37
We're going to bring our melted butter over. We're going to take our loaf. We're gonna place it in
8:44
and then we're gonna start turning it around that way it all gets coated.
8:52
Going to get a spoon.
8:58
Pour that melted butter on the top. All right. What we're going to do now is
9:04
bring the sugar over. We're going to take the cake out of the butter and put it into the sugar
9:10
mixture. And we're going to do the same thing. Dunk it in. Coat all the sides.
9:17
Be very careful. This will hold up, so don't be afraid of it.
9:22
We're going to coat the sides. Going to get another spoon. Just going to take that cinnamon sugar mixture.
9:29
Sprinkle it on top. Coat it well.
9:36
All right. What we're going to do now is place this back into the pan. That way it looks really nice. We're going to
9:42
take the rest of that sugar mixture, sprinkle it on top.
9:49
Okay. Tell me, you wouldn't want to serve that up for fall, for Thanksgiving, breakfast, brunch,
9:56
Christmas. All right, I'm going to cut my cinnamon swirl doughut bread and give it a try
10:03
for you.
10:11
Look at the crumb on that.
10:28
That is scrumptious. Today I'm going to show you how to make
10:33
no fail easy classic banana bread. Grab you four overripe small bananas and
10:41
we're going to get going mashing those up. So take your banana and we're just going to peel it. Just
10:48
break it up into your bowl. Now you can use your bananas if you have
10:55
them in the freezer and you are saving them for a rainy day. You can take them out, thaw them, and then drain off any
11:02
excess liquid that may have occurred on them when they were frozen.
11:09
Now, if you're using large bananas, you can use two large bananas, or if you
11:14
have medium bananas, then you can use three.
11:21
And once you get them all into your small bowl here, we're going to mash them up with a fork.
11:30
Now, you can leave little pieces of banana in here if you want. You like that texture in a banana bread.
11:38
Now, bananas are the star of the show. So, you want to make sure that you have enough.
11:44
Want to have that banana flavor in there. Once you get these all mashed up,
11:50
we'll set these aside. Now, the riper your bananas are, the more sweeter the
11:56
more sweeter the bread will be and it'll have more moisture. Now, I think this is
12:02
a really good consistency. All right, we're going to start putting our dry ingredients together.
12:10
To our large mixing bowl, we're going to add in two cups of allpurpose flour. I'm
12:16
just going to kind of dig deep into my flour here. come up and even that out
12:26
and then add it to my bowl. I got some cleaning up to do on that one.
12:37
There we go. We're going to add one teaspoon of
12:42
baking soda.
12:47
That'll help give it a rise. Little leavenning agent there.
12:54
We're going to put in half a teaspoon of salt.
13:04
And we're going to put in half a teaspoon of some ground cinnamon.
13:10
Oh, that'll make my husband happy. An overfill of cinnamon.
13:16
Take your whisk. We're going to blend this all together. Kind of airate it. And then we're going to get that leavenning agent all mixed up in there
13:23
so that the banana bread rises evenly.
13:30
We're going to set this aside and then we're going to get our butter and sugars ready.
13:39
Got one stick of softened butter. This is half a cup.
13:47
We're going to add half a cup of brown sugar. Now, you want to make sure you pack it.
13:58
Let's press down. We'll add that.
14:05
And then we're going to add 1/4 cup white granulated sugar.
14:18
I'm going to be using my electric hand mixer. We're going to beat the sugar and the butter together till it's nice and
14:24
creamy.
14:32
Now, I do want to let you know that that butter should be very soft when you put it into your mixing bowl. Now, I had
14:39
taken my butter straight out of the refrigerator and then I unwrapped it, put it on a plate, put it in the microwave, and for 20 seconds.
14:48
All right, this step here will take 2 minutes to incorporate the sugars with the butter. Okay, what we're going to do
14:54
now is start incorporating two eggs. We're going to do this one at a time.
15:00
So, I'm going to crack them into a separate bowl. You want to bring your eggs to room
15:05
temperature somewhat if you can.
15:10
We'll incorporate the first egg and then we'll bring the other egg in.
15:19
There we go. Just until combined.
15:32
All right. I'm going to get my spatula. I'm going to push down the sides. We can
15:37
make sure everything is getting incorporated. And then we're going to add in one
15:43
teaspoon of vanilla extract.
15:50
I've been asked about this spoon. Almost spilled it over the side of the bowl. Anyway, this is a measuring spoon. So,
15:56
it has a quarter all the way up to one teaspoon. And then I have another one that starts at one teaspoon and goes all
16:03
the way to one tablespoon. So, okay. So, we're just going to mix until the vanilla is combined.
16:16
We're going to take the mashed bananas. We're going to add it to our mixture.
16:25
All right. Use my spatula here. Get the rest out. Now, I'm going to use the spatula to mix the banana into the
16:32
mixture. Just until combined.
16:37
There we go.
16:43
Now, what we're going to do is combine the flour into the banana mixture a little at a time. We're just going to
16:50
fold it in with our spatula and just get it mixed until all the
16:56
flour is combined. You don't want to over mix or you're going to have a dense bread.
17:02
Put that much in right there. and fold it in. Now, when you fold in, you go down to
17:09
the bottom, get the wet ingredients, and just fold it into the flour. Just like that. So, come down about halfway
17:14
through, pick it up. Another one/3 of the flour there.
17:21
Get that incorporated. This is what's going to make a nice airy
17:28
banana bread.
17:34
And we're not from Arizona. You see my towel over here? We tend to
17:41
pick up things when we go to different states when we travel. And this is a tea towel. And I use that a lot for rolling
17:47
cakes. But I had this one here. So, we're from Texas, Southeast Texas.
17:54
We're in Katie, Texas. Hey, give a shout out if you're in Katie, Texas.
18:02
Give a shout out if you're close. How about give a shout out if you're far away. We want to know where all of y'all
18:10
are at. What state you're in? Let us know.
18:15
Okay. You can see that that's incorporated. So, I'm going to go down to the bottom and just make sure.
18:21
You don't want to over mix. We want to keep that air in there.
18:26
Perfect. Right there. Love it. I've got a loaf pan and it's eight inches by 4 in
18:35
by two inches deep. It's kind of your standard meatloaf pan,
18:41
if you will. I'm going to spray the inside all the way up to the corners, the bottom, the sides. You want this
18:46
bread to come out of the pan, okay? So, make sure you spray it good. I'm going to take it over to my sink and spray it
18:52
there so I don't get it all over the floor and everything else.
18:57
I am using a spray that has flour in it because that will really help release the bread from the baking pan. Let's
19:04
take our batter and put it into our dish.
19:17
All right, I'm just going to spread it out evenly. Oh, I can see the little bits of banana in there. Oh my gosh.
19:24
Don't forget what we're doing today. We are baking the world a better place.
19:29
Banana bread. Now, all ovens are not created equal. We're going to bake this
19:34
at 350° for 45 minutes to an hour. It all depends on the thickness of your dish.
19:41
Use the toothpick test. You're going to place it into the center of your banana bread, probably at the 45 minute mark.
19:48
Pull it out. If it's nice and clean, then your bread is nice and done. Long as it's golden brown on the top.
19:55
I'll be back with a slab of butter. Okay, I've just pulled this out of the
20:00
oven. It took about 55 minutes. Where it got me was right in the center right here. I had to put the toothpick in. It
20:07
wasn't quite done, so I gave it some more time. And now it is completely done. Look at that. What I'm going to do
20:12
is let it rest in the pan for five minutes. I'm going to pop it out, place it onto a wire rack that I have right
20:18
here. Just cool it down a little bit. I'm going to slather some butter on my slice and give it a try for you. I'm
20:24
just going to go along the edges. Just make sure that it's not stuck.
20:33
Oh yeah, look at that. All right, we're going to cool it down some more on the rack. Okay, we're
20:40
ready. We are ready for some banana bread. It's still warm. Well, that's the
20:46
first piece.
20:52
Look at that. Let's take some butter and slather it on.
20:59
That's the way I like it. Going in for a bite.
21:10
Three ingredient pumpkin chocolate chip bread. This is a really simple recipe,
21:17
but if you like pumpkin chocolate chip bread and you don't want to go through the fuss and the hassle of getting
21:24
everything out of your pantry, like your flour, your sugar, getting your eggs, your spices,
21:31
this is it right here. I'm going to show you how fluffy this is, how delicious it's going to turn out using a cake mix.
21:38
Okay, right here, we're going to go ahead and get started. I've got a medium bowl. We're going to place in our cake
21:46
mix. This is a spice cake and it's got cinnamon, nutmeg, and allspice in it.
21:56
So, that'll give you your flavors right there.
22:04
All right, we're going to get some scissors out. How y'all doing today?
22:13
It's a nice day for us in southeast Texas. If y'all don't know, I'm from
22:19
Katie, Texas, which is just right on the edge of Houston, Texas.
22:27
All right, let me get my can opener.
22:34
This is a 15oz can and it's 100% pure pumpkin. You don't want to get the
22:41
pumpkin mix, okay? Cuz then it's got a lot of sweeteners in it. And we already have that in the cake mix here. So, just
22:48
be careful which one you get. We're going to go ahead and open this
22:54
and then add it to our bowl. Pumpkin is such a fall thing.
23:04
We're going to add the whole can.
23:11
Okay, we're going to take a hand mixer and we're going to blend this together until it's nice and combined. That's the
23:18
only liquid in this bread. Okay, you got to remember this is a bread, not a cake.
23:23
So, it's going to be a little more firmer.
23:37
Start off on the low setting. That way you don't have your cake powder
23:42
going everywhere. And then once we get that kind of combined, we're going to start going to the medium.
23:52
I would definitely mix it for about 1 minute.
23:59
Whip some air into it. Y'all, it smells delicious.
24:04
It smells like a pumpkin pie. Now, there is a recipe on the back of
24:10
the can and it has the famous pumpkin pie and the new fashioned pumpkin pie.
24:21
Okay. What you're going to need is a loaf pan. Let me show you how big that one is.
24:29
Get my
24:34
Okay, it's nine by five
24:40
by 3 in tall.
24:46
So, this is a standard loaf pan. Now, what we're going to do is you want to grease and flour it. I'm going to be
24:53
using some baker's joy because it's got the flour inside of the non-stick
24:59
cooking spray. All right. Make sure you get in the corners.
25:11
Okay. What we're going to do now is add our chocolate chips. These are semieet.
25:22
Get our scissors out.
25:28
I love the original Toll House chocolate chip cookies on the back of the package
25:34
here. The recipe so delicious. All right, I'm preheating my oven to 350°.
25:40
We're going to add one to two cups of chocolate chips into the pumpkin batter. Now, it just depends on how chocolatey
25:48
you want this. I'm loading it up. I've got a half a measuring cup. I've got a
25:53
measuring cup that measures half a cup.
25:59
So, I'm going to go in a few times
26:09
and we're going to go half more. One and 1/2 cups.
26:15
Fold it in. Now, it's going to be a stiff batter, but I promise you,
26:22
it's going to come out very fluffy.
26:27
Okay, look at that. We're going to go ahead now bring over our pan that we've prepared and we're
26:34
going to put the batter in.
26:41
Smells so good. Oh, I love the smell of pumpkin. One of my favorites to cook during the
26:47
holiday seasons, during the fall. Pumpkin.
26:54
Spread this out evenly. I can't wait for this one.
27:04
Okay, I'm going take all the excess off cuz you know that is almost a piece of
27:09
bread there.
27:18
While the oven is preheating to 350°, I'm going to tell you some of the recipes that I've made using pumpkin.
27:24
And you can find these on my recipe blog, catherine'splates.com, where you can also find the videos or
27:31
you can go into the description box and find those there. I made magic pumpkin
27:36
cookie bars. Those were really good. Double layer pumpkin pie, pumpkin pull-
27:42
aart loaf, pumpkin spice monkey bread, pumpkin pie pancakes. Yeah, you can do
27:49
that. Pumpkin caramel butter bars. my all-time favorite pumpkin earthquake
27:57
cake. That one was delicious. Y'all go check that one out. What I think I'm
28:02
going to do is top the bread with some more chocolate chips.
28:10
This will definitely give it some more chocolate flavor. And right on top, it'll make it look really good.
28:18
There we go. What do you all think? All right, our oven is preheated. We're
28:24
going to go ahead and place our pumpkin chocolate chip bread batter into the oven for 50 to 60 minutes. You want to
28:33
make sure that you can stick a toothpick into the center of the bread loaf. Pull it out and it comes out clean. It'll
28:40
pull away from the sides of the dish and also it should be kind of firm to the
28:46
touch on the top. I'll be back. You know you want to know what this looks like on the inside. All right, I've just pulled
28:53
my pumpkin chocolate chip bread out of the oven. I had did a toothpick test.
29:00
Just put it into the center. Pull it out and it should be totally clean. It's firm to the touch on the top
29:08
and it's pulled away from the edges. We're going to let it sit in the pan for about five minutes. Then we'll pull it
29:13
out and we'll place it on our cooling rack to completely cool.
29:18
We've cooled down the bread. I'm going to slice it.
29:26
Look at that. Oh, I can smell the spice off of that. Smells really good.
29:34
Oh, yeah. I love the crumb on that.
29:40
I'm going to give this a try for you.
29:55
Oh my gosh. Who says you can't put pumpkin and chocolate together? Good morning, everyone. I'm going to show you
30:01
how to make apple pie bread. So delicious. There's many variations.
30:09
Pick you a can of pie filling, box of cake mix,
30:15
some fruit, some flavoring, and then just a few
30:21
things over here that's going to pull it all together. So, this doesn't have to be apple pie. This can be blueberry.
30:27
This can be cherry. Heck, I'm going to show y'all a pumpkin recipe in the fall
30:32
there. So, hang on to that. Y'all ready? This would be great with a
30:39
cup of coffee. This would be great to slice up, give to your kids on the way
30:44
out the door to back to school. Yeah, even dessert. Is that good? All right.
30:50
Now, I was going to show you that another great pairing chocolate and cherry pie filling.
30:57
There's also like you could do a white cake mix with blueberry pie filling.
31:03
Yeah, that sounds delicious, doesn't it?
31:08
Y'all comment down below what flavor you want to make after you do this apple pie one. First thing we're going to do is
31:15
put our dry ingredients into a large bowl. We're going to start off with the yellow cake mix. This is 15.25 oz size
31:25
box. This will wake everybody up.
31:31
It'll smell so good throughout the house.
31:36
It's not fall yet, but you can certainly make an easy dessert bread.
31:43
All right, there we go. As simple as that.
31:55
All right, let's get our flour over here and we talk about that.
32:00
Now, we're going to be using one cup of flour. Now, the recipe calls for self-rising flour. So, if you have that,
32:07
just go ahead and add that to your cake mix here. Now, if you don't, you can use allpurpose flour and turn it into
32:14
self-rising flour by just adding 2 teaspoon of baking powder.
32:20
I tend to have all-purpose flour on hand all the time. And if I need to turn it into self-rising flour for a recipe, I
32:27
just do that as simple as this right here.
32:34
Now, we're going to go ahead and whisk that together.
32:44
Add that to your cake mix.
32:52
We've got ground cinnamon. I'm going to add one tablespoon
33:00
now. If you're doing the blueberry or if you're doing another flavor,
33:08
I wouldn't put the cinnamon in there. That's just to enhance the apple.
33:14
I'm going to whisk this all together. Yeah, you could put this together
33:21
lickety split in the morning or if you're looking for a nice dessert
33:26
at night, put this together. It's very simple.
33:33
What keeps it simple is your box cake mix right here. Right, let's set this
33:38
aside for just a second. I'm going to bring over four eggs. crack
33:44
them all into a bowl. And then we're going to whisk that up.
34:02
There we go. That'll make it very nice and fluffy, too. Just going to use my small whisk.
34:10
Break up the yolks. Whisk this carefully till it's all well combined. Kind of
34:17
like it's scrambled. Hope everyone's having a good morning or a good afternoon, whenever you are
34:23
watching this. Yeah, that looks good. All right, we're going to bring our mixture back over.
34:33
We're going to add the eggs. Okay, add your whole can of apple pie
34:41
filling. This is a 21 oz can.
34:47
I'm going to take a look at these apples and see if I need to break them up.
34:52
Yep. I'm going to go in with a knife. Going to kind of break these apples up
34:58
with a knife. just go in and just kind of cut through them all the way down to the bottom
35:04
because they have big big pieces in here. We want to cut those down to size,
35:11
bite-sized pieces. All right. Once you feel you got them all, go ahead and add that to our
35:18
mixture.
35:23
Going
35:28
to take a wooden spoon and blend this all together till it's well combined.
35:40
The baking powder was going to help make this rise along with the cake mix. So,
35:52
make sure you get down in there. Get all that flour up. It gets stuck down there. You can't see it.
36:02
Yeah. You don't even need an electric hand mixer for this. Just get in there with a wooden spoon or a spatula, blend
36:09
it together. What we're going to do is put some fresh apple in it.
36:15
All right. So, I'm just going to take the peel off. If you don't have an apple, you don't
36:21
have to you don't have to do this step. I have an apple and so I just want to put it in there. Give it a freshness.
36:32
Just going to cut off the four sides.
36:43
So, we're going to cut these in dices.
36:53
Okay. We're going to add our diced apples to our batter.
37:00
Just fold that in. I'm just going to use my wooden spoon here. Give it a rough mix.
37:11
All right, we're going to put these into two loaf pans. So, what I'm going to do is take some cooking spray. Now, I'm
37:18
using some that has the flour already in it, or you can grease your pans and flour them and then shake out the
37:24
excess.
37:32
Okay, these are 8 and 1/2 by 4 and 1/2 by 2 and 1/2 in. What we're going to do now is place our
37:39
batter and divide it equally in between the two pans.
37:53
Oh, I love those real apples in there. And they're going to bake down.
37:59
All right, I've got my oven preheating at 325°.
38:04
325. We're going to place these in the oven to bake for 35 to 40 minutes. You want
38:13
to make sure that you put a toothpick in the center of the cake. Pull it out and it should come out clean. Be nice and
38:18
golden all around the edges and pull away just a little bit. I'll be back.
38:25
All right. Look at those. I'd already tested it with a toothpick.
38:30
Just put it through the center. It shouldn't be wet on the toothpick. I go in a few places just to make sure that
38:36
it is okay. It's nice and golden on the top, firm to the touch, which is what you want.
38:44
Okay, we're going to cool these down completely. And then we're going to slice into them. Okay, these have cooled
38:51
and as you can see, they've pulled away from the edges of the pan.
38:59
Oh, look at that. Doesn't that look beautiful on the back side? Place it on a serving platter. We're
39:06
going to cut some slices.
39:14
Still nice and warm on the inside.
39:19
Using a bread knife to cut this.
39:25
You'll see the apples in there. It smells so delicious with that cinnamon in there.
39:32
All right, I'm going to give this a try.
39:42
That crumb texture, that's delicious.
39:48
Oh, I love the texture of the apples in there. Hello everyone. Ready to put two cans of
39:56
biscuits to work? I'm Katherine with Katherine's Plates, where everything is simply delicious. We're going to put a
40:04
luscious twist on an old classic, and we're going to make blueberry monkey
40:10
bread. H, it's a pull aart kind of a loaf with blueberries and a drizzle on
40:16
top. It's going to be so delicious, y'all. Check out how I'm going to make this one today. All right, let's bring
40:23
our cutting board over. We're going to open up one of the cans of biscuits. I'm using the Grand's
40:30
Southern Homestyle biscuit. Whatever you have. You're going to need two cans.
40:37
And these are 16 oz cans each. And there's eight biscuits in each can.
40:47
Woo. All right, we're going to take them out, spread them out, and then we'll come
40:53
back to the other can. Now, you can just use a knife or you can use some scissors from your kitchen that
40:59
are clean. And we're going to cut these into pieces.
41:06
Looking at doing eight pieces. So, we have small little bites. So, we're going to do like that right
41:12
there. I just cut it in half.
41:18
Each half gets cut four times.
41:25
Now, once we get this can done, we'll do the next can. And then we'll just set
41:31
these aside for a minute.
41:38
Nice little summertime breakfast, brunch idea,
41:45
dinner, dessert, whatever you want. Woo! Coming out. And oh, that was it.
41:57
Now, in the fall time, y'all go check out my channel and find the pumpkin spice monkey bread.
42:04
really good one. And in the winter time, Rihanna, who's my daughter, we did a hot
42:12
chocolate monkey bread. Oh my goodness. The flavors you can do, you guys.
42:19
And then I have a standard monkey bread out there also. Oh, check it out. You
42:25
can find my recipes at katherine'splates.com and just type something in.
42:32
They're all there for you. That should do it right here. We'll set this aside.
42:37
There we go. All right, let's make our coating for the biscuit pieces. In a
42:44
small bowl, we're going to add in 1/4 cup of allpurpose flour.
42:50
1/4 cup white granulated sugar. 2 tablespoon of softened butter.
42:59
And then we're going to add in half a teaspoon ground cinnamon.
43:06
Now we're going to take a fork and we're just going to blend this together till we get a nice crumble.
43:14
There's many techniques to making monkey bread,
43:19
especially with the coating. That's looking pretty good.
43:26
Definitely want nice little crumbs in there. Yeah, that's what we're looking for
43:32
right there. Y'all see that?
43:37
All right, we're going to bring over a Ziploc bag. Now, I'm just using my
43:42
Ziploc bag holder here. It's really nice. It extends upwards for your large
43:47
Ziploc bag, or you can take it down for a smaller Ziploc bag. We're going to place our coating mixture into the bag.
44:01
Okay, while that sits there, we're going to make the blueberry filling. Now, to
44:07
make the blueberry pie filling, we're going to use blueberry pie filling. Now, we need to loosen it up a little bit so
44:13
that it can coat all the biscuits. This is a 21 oz size can. I'm going to heat
44:18
it up in a medium saucepan with another ingredient and get this going. Now, that
44:25
other ingredient is butter. Four tablespoons.
44:31
In our saucepan, we're going to heat that on a medium heat. We'll start melting that down. Now, while that's
44:37
melting, we're going to go ahead and add in our blueberry pie filling. Oh, doesn't that look good?
44:43
Still a swipe.
44:50
That's good. He's excited. I am. He is very excited.
44:57
Let's add that all in. We just want to heat this through. We're not going to boil it or anything.
45:04
I know y'all stay tuned to see how this all comes together. And we have a
45:09
delicious cream cheese icing going on the top. Oh, it's going to pull it all together.
45:16
All right. Once your butter is all melted, turn off the heat. Get your bud
45:21
pan. We're going to spray it very thoroughly. Make sure you get in all the nooks and crannies and everything. That
45:27
way, this monkey bread will come out of our pan. I'm going to take this over to the sink to do it because I don't want
45:33
it going all over the place and getting everything nice and sticky. So, I'll be right back.
45:39
There we go. Make sure you get that tube shape also in there. All right, we're going to
45:46
bring over our topping mixture. We're going to bring over our biscuits. Here
45:54
we go. We're going to put half of them into our bag here.
46:10
All right, I think that's half right there. Put a few more in. Going to take them off my stand.
46:18
Zip up your bag. We don't want all that coming out.
46:25
All right. What we're going to do is get everything nice and coated. All right. Just separating some of them that kind
46:31
of stick together. That looks really good. All right. We're going to put this layer in the bottom
46:38
of our bun pan that we prepared.
46:48
Now, make sure you leave some of the mixture in there. So, we can do the
46:54
second batch. Oh, it smells delicious. And we haven't
46:59
even done the blueberries yet. We've got enough crumble for the next batch. What we're going to do mixture
47:06
here, drizzle it on top of the coated biscuit pieces here.
47:13
Let it ooze on down.
47:20
Y'all drooling yet? Yes. Let's bring our bag of mixture back over
47:25
the coating. Put the rest of the biscuits in it and get these nice and coated. And now we're going to take them
47:31
out. We're going to place them on top of the the blueberry mixture there. Be
47:37
nice layers. Now, don't smash it in there. We want that blueberry filling to
47:43
go in between these, too. Get all in between. All right, let's finish it off with the blueberry pie filling.
47:54
Look at that. I've got my oven preheated at 350°.
48:00
I've got a sheet pan here. I'm going to cover it with some foil.
48:05
This is to protect our oven. If this goes over the sides just a little bit, you don't want that
48:11
blueberry pie filling in your oven. All right, it'll catch it right there. I'm
48:16
going to place this in the oven for about 45 minutes until it is baked through completely. And then we've got a
48:23
drizzle that we got to put on this to finish it off. I've pulled this out of
48:29
the oven. I've let it rest in the pan for 10 minutes. And what I'm going to do
48:35
is go around the outside just a little bit. Pop it out using a knife. I'm just
48:41
going around the edges here. And we'll do that on the tube also. That way we
48:47
can make sure everything pops out. Now you're going to take your serving tray, platter, plate, whatever you have, and
48:55
you want to put it upside down on your bunt pan.
49:00
And what we're going to do is flip the whole thing over.
49:06
There we go. And we're just going to thunk it a little bit.
49:12
Loosen up. I'm going to grab the sides. Use your towel because it's going to be hot.
49:20
All right. There we go. Look at that thing. Isn't it beautiful? Now, what we're going to do is let that cool down,
49:28
and then we're going to make that delicious cream cheese frosting to put on top. We're going to place 4 oz of
49:35
cream cheese that I've brought to room temperature into a medium bowl. I'm going to use the whisk attachment for my
49:41
electric hand mixer, and we're going to smooth out the cream cheese.
49:47
I've got 1 and 1/2 cups of powdered sugar, and I'm going to add it in about half a cup at a time.
49:54
And then I have a little bit of milk here. And we'll add about a teaspoon or so just to get it started. And we'll go
50:00
back and forth until we get a nice smooth consistency. Now, at this point, I'm going to go
50:06
ahead and add about half a teaspoon of lemon juice.
50:12
We don't want to overpower it. Blend that in.
50:20
All right, we're going to add the rest of the powdered sugar. little bit of the milk.
50:26
And what we want to do is get to a stage where this will drizzle on top of our blueberry monkey bread.
50:33
That looks really good. Let's drizzle it on.
50:52
All right. All right. Now, I'm going to put some down in the center. Mhm. All right. Here's my bite.
51:06
That drizzle on top, that lemon flavor really picks up those blueberries.
51:12
That's delicious. M. What did y'all think of my luscious
51:19
twist on an old classic, blueberry monkey bread? Pull it apart, you guys.
51:26
Welcome back, everyone. Today, I'm going to show you how to make pumpkin crumble bread. It's going to be a delicious
51:34
pumpkin bread, and we're going to have a nice delicious crumble on top. Y'all go
51:40
grab your can of pumpkin puree. We got a few things that we pulled out of the pantry to pull this one together. The
51:46
first thing we're going to do is make that bread batter and then we'll make that crumble. So, we're going to start
51:52
in a large bowl. We're going to go ahead and put that pumpkin puree in. This is a 15 oz can. And when I say 100% pure
52:01
pumpkin, there's nothing else in the can. So, don't get that pumpkin filling because it's already got other stuff in
52:07
there that we don't need. All right, let's put this in a large mixing bowl.
52:13
I'm so excited that it is fall time already. It took a while to get here, didn't it? It was a long summer.
52:25
All right, you are going to need a whisk for this once we get everything in.
52:32
Oh, that smells delicious coming out of the can. M I cannot wait.
52:41
We're going to crack in two eggs.
52:47
I'm going to crack it into a small bowl. That way we make sure we don't get any shells
52:52
like that one there. We'll get that one out and add it to the bowl.
53:01
That was a clean one.
53:06
We're going to add in half a cup of milk.
53:13
And I have half a cup of melted butter, which is one stick. I just let this cool
53:19
down just a little bit after I melted it. That way the eggs won't scramble.
53:26
We're going to add in half a cup of brown sugar. I'm just going to go in. Now, we want to
53:33
pack it. So, I'm just going to smash it down. There we go. That'll go in.
53:43
And then we're going to put in half a cup of granulated sugar.
53:49
Now, I've got cane sugar that I'm using. That's why it's a little darker.
53:54
There we go.
54:01
All right. We're going to take our whisk, blend this all together.
54:10
All right, we're going to add in one teaspoon of vanilla extract.
54:16
And then we'll whisk that in.
54:28
All right, we're done with the whisk. Grab you a spatula.
54:35
We're going to add one and a 3/4 cup of allpurpose flour.
54:44
Ah, I found this. It's been missing.
54:50
All right, we're going to go in.
54:56
I'm so excited. It's baking season for me. I feel like that.
55:09
Get in there. Okay. Then I'm going to take my 1/4 cup here and go in three times.
55:17
That will give us an even amount here.
55:26
We're going to add one teaspoon of baking soda.
55:31
Help it rise. Half a teaspoon of salt.
55:39
Oh, we got the good stuff coming. One teaspoon of pumpkin pie spice,
55:47
y'all. Let's give this a smell. M. Wow.
55:53
Fall is in the air. We're back to getting some cool weather
55:58
starting tonight. So, we're excited. Hopefully. And
56:06
we're going to add some more cinnamon to it. One teaspoon.
56:13
Now, what you want to do is take your spatula, blend that all together.
56:20
So, we're going to take our spatula. We're going to fold it all in. So, start down at the bottom, pull up into the
56:26
flour. And we're going to keep doing that until we get a nice little batter going.
56:33
Try to keep it in the bowl.
56:40
Oh, that smells good, you guys. We're going to set this off to the side. Let's make the crumble.
56:47
In the medium bowl, we're going to put in half a cup of allpurpose flour.
56:55
I'm not going to really worry about scraping it to get a perfect amount.
57:00
Then we're going to add in 1/4 cup of brown sugar.
57:11
And then we're going to add in two tablespoon of white granulated sugar.
57:23
And then half a teaspoon of pumpkin pie spice. Yeah, we're going to have it everywhere.
57:31
Going to wake up that pumpkin.
57:38
All right, let's blend this together.
57:45
I've got half a stick of butter or 1/4 cup of very cold butter and all I did
57:51
was cube it. We'll add that and then we're going to blend that together.
57:57
We're just looking for a nice even crumble. I'm just using my pastry cutter or you
58:03
can use a fork or you can even go in with your hands if you want to do that. All right, I just went in with my hand.
58:08
This is what we're looking for right here. This is nice right here. All right, let's build our pumpkin crumble
58:14
bread. All right, grab you your standard loaf pan. This is a 9x5x3
58:20
inch size. Now, grab you a piece of parchment paper. We're going to crush it up.
58:30
Wad it up. You're mad at it. Yeah. And then we're going to place it into
58:35
our loaf pan there. Oh, this will really help get that cake
58:41
out of here or that bread. It's going to seem like cake, isn't it?
58:48
Put it in. Make sure it goes all the way to the corners.
58:54
And then we're going to scoop the bread batter right here into it.
59:07
Now, if you don't have parchment, you could just grab some cooking spray and spray the loaf pan very good.
59:17
I'll just spread it out nice and even.
59:26
All right, that's kind of almost a slice, isn't it? We don't want to waste that.
59:33
Okay, bring over your crumble. We're going to put it right on top.
59:41
Thomas, what are you feeling right now? I'm going to need a cup of coffee here in an hour or so.
59:47
Yeah. Put it all on there. Y'all ever heard of
59:52
this pumpkin crumble bread? Oh, kind of reminds me of a coffee cake.
59:59
Yeah.
1:00:06
All right. This is going to bake in a 350°ree preheated oven for about 65 to 75
1:00:14
minutes. You are going to want to put a toothpick through the center of the cake or the bread and have it come out nice
1:00:21
and clean. Okay guys, we're going to be back. We've pulled this out of the oven and we
1:00:27
cooled it down completely before you remove it out of the pan.
1:00:34
Now, if you can grab the edges of the parchment paper,
1:00:40
spread it out. Look at that, you guys. Bread knife.
1:00:49
The house smells delicious.
1:00:57
All right, y'all. Look at that. Look how moist that is.
1:01:06
That is the pumpkin there. Giving that a try for you guys.
1:01:22
I love that texture.
1:01:27
It's spongy like a cake, but it's a bread. And that crumble on top, wow, adds
1:01:35
another layer of flavor on the top of there. And also that nice little crunch.
1:01:41
And that butter kind of like drove it in. All right, you guys. You let me know what you think of my pumpkin crumble
1:01:49
bread. Perfect for fall. That is a new recipe for us and that is
1:01:54
delicious. Give me a thumbs up on this one. If you're new to the channel, make sure you hit that subscribe button down
