Welcome back everyone. It's dessert day
0:02
at Catherine's Place and it's fall
0:05
outside. We need to bake. So, I'm going
0:08
to make an old-fashioned apple dapple
0:11
cake. It is so easy, but it's so
0:14
delicious and full of flavor. It's moist
0:18
on the inside. It's going to have bits
0:20
of apple all through it along with
0:23
another crunchy idea. All right, you
0:25
guys. Grab some delicious apples. I'm
0:28
using Envy apples for this one today
0:31
because we are going to peel, core, and
0:34
chop these up into little bite-sized
0:36
pieces so they just melt all through the
0:38
cake. There is also going to be a sweet
0:41
topping that's going to melt all inside
0:44
of this cake and keep it even more juicy
0:47
and moist on the inside. All right, grab
0:51
your apples and we'll see you at the
0:52
next step. You're going to need about
0:54
three apples for this recipe. Now, I've
0:56
already washed them off. And what I'm
0:58
going to do is just peel them.
1:04
Like I said, you can use any type of
1:06
apple you want. If you like the more
1:07
tart apple, you can use the Granny
1:10
Smith. I'm using the Envy apples because
1:13
we really love the Envy apples.
1:16
And you can use the Honey Crisp,
1:19
whatever you like. I'm going to show you
1:21
one here.
1:24
Now, what I like to do is just go down
1:26
the four sides of the apple.
1:36
That just kind of cuts off the core.
1:39
Then we'll just lay them flat.
1:46
We're going to cut them into small
1:50
wedges
1:52
and then we'll dice them up. Now, once I
1:54
get these all chopped up, we're going to
1:57
put them into a bowl of water to keep
2:00
them from getting brown. But we do want
2:01
to have them ready for that step when
2:04
it's time to add them to the cake
2:06
batter.
2:08
All right, I'm going to do these two
2:10
apples and then I'll be right back. Now,
2:12
I wound up doing two apples because
2:14
they're pretty large than just a regular
2:17
apple size. You want about three cups of
2:20
diced apples, which I have here. And
2:22
then I just filled up the measuring cup
2:24
up with water just to kind of keep the
2:25
apples nice and fresh and from getting
2:27
brown. So the next step is we're going
2:31
to sift our dry ingredients. And there's
2:33
just a few of them. So we're going to be
2:35
taking three cups of allpurpose flour
2:39
and we're going to place it into our
2:41
sieve in a medium bowl. Dig into my
2:45
flour. Come up. Take the back edge of
2:48
your knife and just kind of flatten it
2:50
out.
2:53
Then we'll put it in our sifter there.
3:03
Always doing that, aren't I? All right,
3:05
get all that off of there.
3:12
To our flour, we're going to add in one
3:14
teaspoon of salt.
3:17
Sprinkle it all over.
3:20
And then we're going to add in one
3:21
teaspoon of baking soda
3:26
all over.
3:28
And then to give it that spice to go
3:31
along with the apple flavor, I've got
3:33
one teaspoon of ground cinnamon. And
3:35
I've got half a teaspoon of ground
3:38
nutmeg. And we'll just sprinkle that in.
3:44
Now you can take a whisk and then just
3:47
kind of
3:49
blend it in as we're sifting and get a
3:52
good mix on it.
3:56
And then once we get this done,
4:00
we're going to start
4:02
with the wet ingredients.
4:06
And you'll need a large bowl for that.
4:10
All right, you guys. Sorry that it's
4:11
dark in this corner here, but the light
4:13
went out. So, in our large bowl, we are
4:17
going to place two cups of white
4:20
granulated sugar. I'm just using cane
4:23
sugar.
4:29
This is a fall dessert.
4:33
It's going to be sweet.
4:36
There we go.
4:38
And then to that we're going to add one
4:41
cup of vegetable oil.
4:49
All right, we're going to crack in three
4:51
eggs. I'm just going to put them into
4:52
the bowl here. Check for shells and then
4:54
just add them.
5:06
There we go.
5:09
And then we're going to add in two
5:11
teaspoon of vanilla extract.
5:20
One and two. It's going to be a
5:22
flavorful cake. Love it. Love it. Love
5:25
it. All right, we're going to get a
5:27
whisk. We're going to blend this all
5:28
together.
5:33
I always love when the seasons change
5:36
because the recipes change, right?
5:39
And then the holidays come into it,
5:42
right? You want them really whisk this
5:44
together. You can get your hand mixer
5:46
out and do this. Also, just blend it all
5:48
together. You just want to make sure
5:50
those eggs are nice and incorporated.
5:54
Yeah, that's nice and smooth. Look at
5:56
that.
5:57
Now, what we're going to do is start
5:58
incorporating our dry flour mixture into
6:02
the wet ingredients here, a little at a
6:05
time until it's well combined. So, I'll
6:08
do about a third of it
6:13
and mix that in.
6:21
We'll dump the rest in.
6:25
Mix that in.
6:29
Just getting that off of there. And then
6:30
what we'll do is we'll get a our
6:32
spatula.
6:34
And then what we'll do is go around the
6:36
sides of the bowl
6:39
and get everything incorporated.
6:42
Now, this is where you can start adding
6:44
your nuts. If you want to do pecans or
6:47
walnuts, I'm going to be doing some
6:49
chopped walnuts. I feel like those would
6:51
go with the apples.
6:53
And we're just going to fold them in.
6:57
Now, you don't have to put nuts in there
6:58
if you don't want to, but why wouldn't
7:00
you? I'm going to drain out my apples
7:03
and we're going to add those. I just
7:05
took the sifter from the flour and put
7:08
my apples in there.
7:12
All right, let's incorporate them in.
7:15
Give them a nice fold till everything is
7:17
nice and coated with the batter.
7:20
Woo!
7:22
Woo! There we go.
7:25
All right, we're going to take our bun
7:26
pan and we're going to spray it
7:28
liberally with some non-stick cooking
7:32
spray.
7:33
Get into every corner, every nook,
7:36
everything you can find in that pan and
7:38
spray it well.
7:40
You want this cake to come out nice and
7:42
clean.
7:46
Make sure you go around the tube of it.
7:48
Also,
7:50
take your cake batter and put it into
7:52
the bun pan.
8:03
Now, it is a thick batter.
8:06
Once we get it all in there, we'll even
8:08
it all out. That way, it cooks even.
8:14
And don't forget, we still have a
8:17
topping to put on after the cake is
8:18
done. So stay tuned for that because
8:21
that is going to melt into the cake.
8:24
Smooth it out. Make sure it's nice and
8:26
even.
8:30
We'll clean the pan a little bit so I
8:32
don't burn on the edges.
8:40
I've got my oven preheated at 350°.
8:44
We're going to bake this for 1 hour.
8:48
Now, make sure you take a toothpick and
8:49
put it through the center of the cake
8:51
and it needs to come out clean or it can
8:53
have a crumb or two on it and that means
8:54
it's done. If you need more time, just
8:57
put it back in there. Just make sure you
8:58
have a done cake. Don't forget, we have
9:01
a delicious little sauce. It's only
9:04
three ingredients that we're going to
9:05
make to pour over the cake. It's going
9:08
to go inside of that cake and then we're
9:09
going to flip the cake out once it's
9:11
cooled down. All right, you guys. Come
9:13
on back.
9:15
Look at that cake, you guys. All right,
9:18
I'm just taking a large skewer. I'm just
9:21
going to go through the cake all the way
9:22
to the bottom. Pull back out. It's nice
9:25
and clean. We'll check it right here.
9:28
Oh, yeah. It's done. All right. So, I'm
9:31
going to take that same skewer or if
9:33
you're using a toothpick, just make some
9:36
holes around the cake,
9:38
and while it's still hot, we're going to
9:40
make a glaze
9:43
that's going to sink all into this cake.
9:46
We've got a medium saucepan, and what
9:48
we're going to do is add two sticks of
9:51
butter
9:53
into the pan.
9:56
And then we're going to go ahead and put
9:57
this on a mediumigh heat.
10:01
Start melting that.
10:04
All right. I'm going to put half of this
10:05
stick in there. So, we're talking one
10:07
and 1/2 sticks, 3/4 cup. And then to
10:11
that, we're going to add 1/4 cup of
10:14
milk.
10:17
And then we're going to add in one cup
10:20
brown sugar.
10:25
Woo. I'm going to have to do some baking
10:27
shopping.
10:29
Three and four. I've got a quarter cup
10:31
here. So, I'm going to go in four times.
10:36
And then what we're going to do is blend
10:38
this together. Get that butter nice and
10:40
melted.
10:42
Melt the sugars into it.
10:45
This will take about 3 to five minutes.
10:48
All right, we got one more minute. As
10:50
you can see, it's sizzling, and that's
10:52
just what you want. You don't want a
10:53
rolling boil.
10:57
Okay, we're ready to pour this all over
11:00
the cake. Pour slowly so it goes into
11:03
those holes.
11:07
Y'all see that?
11:09
You want to let it sink in,
11:12
not go over that hole there.
11:18
Poke a few holes.
11:20
Right. Okay, what we have to do now is
11:22
let this cool completely in the pan. Let
11:26
it absorb all of that butter, brown
11:28
sugar mixture, which will solidify in
11:31
the cake. Oh, it's going to be
11:33
delicious. Okay, you guys, I'll see you
11:35
back here once this is cooled completely
11:37
and we're going to pop it out of the pan
11:40
and it's going to look fabulous for our
11:42
fall dessert. All right. Once it's
11:45
cooled down completely, just take a
11:47
knife and kind of go in between the cake
11:49
and your pan and just kind of pull it
11:51
away a little bit and then kind of at
11:53
the tube also in the center of your
11:55
cake. Now, take your cake stand or a
11:59
serving platter and we're going to place
12:02
it on top
12:04
and then we're going to hope for the
12:05
best
12:07
and then flip it over.
12:18
All right. Well, there we go.
12:21
Okay.
12:23
That looks delicious.
12:27
All right. I'm going to cut a piece.
12:30
Give it a try for you. All right. I'm
12:33
going through with a bread knife. Oh, do
12:36
y'all see those chunks of apples all
12:38
through here?
12:41
There we go. Oh, look at that.
12:46
Let's lay it down. You can see the nuts
12:49
in there,
12:52
the apples,
12:55
that glaze that went everywhere.
13:00
We need a fork.
13:08
There's my bite right there.
13:22
Those apples in there are nice and
13:24
moist.
13:26
It picks up that cinnamon and that
13:28
nutmeg in there. You got that crunch
13:31
from the nuts, from those walnuts in
13:33
there.
13:34
Okay, you guys. Y'all can't go through
13:37
fall without making this right here. You
13:39
need to make my classic apple dapple
13:43
