We're going to take two delicious
0:02
classic Italian dishes and we're going
0:04
to merge them together and we're going
0:07
to make a creamy chicken Alfredo
0:11
lasagna. This is a semih homemade
0:13
recipe. There's not a lot of cooking
0:16
involved other than we're going to boil
0:18
up some noodles. It's going to be
0:19
delicious. If you want a really easy
0:21
kind of weekn night meal, this one's it.
0:24
Let's get our noodles going. I'm using
0:26
these lasagna noodles right here. You're
0:28
only going to need about nine sheets of
0:30
noodles to prepare this dish. I always
0:32
like to put extra in the pot in case one
0:35
or two of them kind of rip apart because
0:37
I want them pretty straight for this
0:39
recipe. I've got my water coming to a
0:41
boil.
0:43
Lid on makes it go faster. I'm going to
0:45
add a little bit of salt so I can flavor
0:48
our noodles. I like the little
0:51
squiggles, y'all.
0:53
These are wonderful. Let's see. One,
0:56
two, three, four,
0:59
five, six, seven,
1:02
eight, and nine. And a few more
1:07
for luck.
1:09
I'm going to put 12 in. Now, we're going
1:11
to cook these for the directions on the
1:13
back of the package. And it says about 8
1:16
minutes, gently stirring occasionally.
1:19
And then what we're going to do is drain
1:20
these off. We're going to run cold water
1:22
over them to stop the cooking process
1:25
and make them easily manageable as we're
1:27
building our lasagna. We're doing it
1:30
semi-h homemade today, so the chicken is
1:32
already done for us. And we're going to
1:33
go ahead. You want about two or three
1:35
cups. Let's cut this chicken down. I
1:38
chopped it up very finely. That way, it
1:40
can really mix well with the other
1:42
ingredients.
1:44
We're going to grate up one pound
1:46
mozzarella cheese. Why would you not
1:48
grate it fresh?
1:52
Then we're going to grate up one block
1:54
of Parmesan cheese. Actually, this is a
1:56
triangle, 5 oz. We're going to make one
2:00
big mixture. So, into the large bowl
2:03
with our diced cut chicken, we're going
2:07
to add one cup of ricotta cheese and one
2:11
cup of cottage cheese. Now, you can do
2:15
two cups of one and call it a day or two
2:18
cups of the cottage cheese and call it a
2:20
day. Or you can do half and half, which
2:22
I'm going to do. So, I've got them both
2:24
already measured out here. So, we're
2:25
going to add them to the bowl
2:30
and a cup of ricotta cheese. To that,
2:33
we're going to crack in one egg.
2:37
This will help bind it all together.
2:41
We're going to add in some seasonings.
2:44
I have about 1/4 teaspoon of salt, 1/4
2:48
teaspoon of black pepper. I've got a big
2:50
whopping teaspoon of garlic powder, one
2:53
teaspoon of Italian seasoning, and I've
2:55
got about a/4 teaspoon to half a
2:58
teaspoon of ground nutmeg, which when
3:01
you're making a white sauce, that
3:02
nutmeg, woo, it'll be so delicious in
3:05
it. So, I'm going to add all that in.
3:09
We've got a jar of Alfredo sauce. This
3:13
is 15 oz. We're going to add that in.
3:18
And we're going to add in half of this
3:20
jar. So, one and a half jars total. Hang
3:24
on to that. We're going to add in half a
3:26
cup of Parmesan cheese, freshly grated.
3:30
We'll add that in. And then we're going
3:33
to add in a full cup of mozzarella
3:35
cheese
3:37
so it can melt on in.
3:41
Save the rest for the top. Get a spatula
3:43
and let's blend this all together. Make
3:45
sure that egg is all mixed in.
3:49
All our flavors are in here.
3:54
I think we have it all combined. Look at
3:57
that, you guys. Oh yeah. I can't really
4:00
try that for you right now because we
4:01
had an egg in it and I'm not about to do
4:03
that. Let's build a lasagna.
4:06
Bring over a 9 by13 baking dish. The
4:10
rest of the sauce, pour it into the
4:12
bottom.
4:15
I'm going to get a brush. We're going to
4:16
slather it around. Go up the sides a
4:18
little bit. That'll keep the lasagna
4:20
noodles from sticking.
4:22
It'll flavor that bottom layer also.
4:26
Yeah.
4:31
Now, if you don't want to do the sauce,
4:32
you can just get some butter and slather
4:34
it in there or just spray it with some
4:35
non-stick cooking spray. But this is all
4:39
flavor.
4:40
Now, when my noodles were done, I
4:42
drained them. I ran them under some cold
4:44
water to cool the noodles off. Then, I
4:47
just laid them in a sheet pan on top of
4:49
a piece of parchment paper so they
4:51
wouldn't stick. And that way they can
4:53
dry off a little bit and look nice and
4:56
pretty like that. So we're going to take
4:58
three of them and then we're going to
4:59
lay them in the bottom of the baking
5:01
dish. If you need to overlap a little
5:03
bit, you can do that.
5:08
Now this is a 9 by13 baking dish. I'm
5:10
just going to overlap just a little bit
5:12
so we can get all three in there. See
5:15
how these just peel off of each other?
5:16
They've been sitting there for a little
5:18
bit.
5:20
Let's get our mixture. What I'm going to
5:22
do is take the mixture, going to kind of
5:24
eyeball it into threes. So, I'm going to
5:26
take one/3 of the mixture, kind of
5:29
dollop it around my noodles on the
5:31
bottom of the baking dish here, and then
5:33
just spread it out. Get nice full
5:36
coverage.
5:40
There we go.
5:43
We're going to top it with three more
5:46
lasagna noodles.
5:51
Now I'm going to take the mixture. I'm
5:53
just going to kind of eyeball it and
5:54
divide it into half and just put half of
5:57
that on top of the noodles. Spread it
6:00
out. I'm going to be serving this up
6:02
with a nice big Caesar salad. It's a
6:06
kit.
6:10
Three more pieces of the lasagna
6:13
noodles. We're going to put the rest of
6:16
the mixture on top. Smooth it out.
6:22
Y'all, I'm a big fan of cottage cheese.
6:25
I've learned to like ricotta cheese
6:27
also, but I can't give up my cottage
6:28
cheese. So, I put both of them in here.
6:31
Are y'all team cottage cheese or are you
6:34
team ricotta cheese? I'm going to take
6:37
the rest of that parmesan cheese, which
6:39
is about half a cup. Sprinkle that on
6:41
top.
6:44
Put this layer on first.
6:46
And then of course we're going to take
6:48
the rest of that mozzarella cheese,
6:50
which is about one cup.
6:53
Good amount all on top. Coat the whole
6:56
thing. I'm going to sprinkle a little
6:59
bit of Italian seasoning across the top.
7:03
Good amount.
7:05
We're going to cover this with some
7:07
foil.
7:08
If you don't have non-stick foil, just
7:11
take some foil, spray it with some
7:12
non-stick cooking spray on the center
7:14
part there, and then lay that on top of
7:16
the casserole here.
7:19
Keep that cheese from sticking. All
7:21
right, this is going to go in the oven,
7:23
375° for 30 minutes. We're going to
7:26
remove the foil, place it back in the
7:28
oven for another 10 to 15 minutes until
7:31
that cheese is nice and melted, bubbly,
7:34
golden brown across the top, and
7:36
everything is heated through. I'll be
7:38
back. Now, it's been sitting out for
7:41
about 10 minutes to kind of pull itself
7:43
all together, but all those flavors
7:45
melt. I did put some fresh parsley on
7:48
top.
7:49
Jazz it up a little bit. I love the
7:52
sides that are nice and golden brown.
7:55
All
7:57
right, you guys. Look at that. Layers of
8:00
goodness.
8:02
Let me get a fork and give this a try
8:03
for you.
8:07
Oh, cheese everywhere.
8:15
Chicken Alfredo
8:17
lasagna.
8:19
It's creamy. Those flavors just meld
8:23
together. It's cheesy.
8:26
Make sure you put that nutmeg in there.
8:30
That's amazing flavor. Thumbs up on this
8:32
one. Two classics put together as a
8:36
creamy chicken Alfredo lasagna.
