Today we're going to make a comforting,
0:02
hearty weekn night meal. This is a
0:05
ground beef Lombardi casserole. It's
0:09
filled with beef, noodles, tomatoes,
0:13
seasonings. It's creamy and it's got
0:17
three cheeses in it. You've got to love
0:19
that. And it's all baked together. What
0:23
we love about this recipe is it's very
0:25
versatile. And as we're going through
0:27
this recipe, I want to show you how
0:30
versatile it is. Now, the first thing
0:33
we've got going on is a large pot of
0:35
water. I'm just bringing that to a boil.
0:37
And like I usually say, place a lid on
0:39
it and it'll come to a boil faster. So,
0:42
while that's happening, we'll come over
0:44
here and I've got a large skillet. We're
0:47
going to put it over mediumigh heat.
0:49
I've got one pound of ground beef in the
0:52
skillet. Ground beef is more of a hearty
0:55
protein for this recipe. You can also
0:58
use a ground chicken, ground turkey for
1:00
a lighter version and a more healthier
1:03
version. Or you can use ground sausage,
1:07
which will give you more spice to the
1:10
dish, pump it up a little bit. Right.
1:13
So, we're going to break up the ground
1:14
beef, start browning it up, and then I'm
1:18
going to add some flavor to it. So,
1:20
we're going to chop up a onion.
1:22
I'm just using a yellow onion.
1:25
I'm just going to take off both ends.
1:27
Get off that outer layer.
1:30
Now, if you don't want to do the onion,
1:31
you don't have to do the onion. You can
1:33
do like dried onion pieces, like the
1:36
minced onion, or you can even use some
1:39
onion powder.
1:41
Or you can skip the onion all together.
1:43
There we go. That one just fell apart,
1:46
didn't it? Three cheeses, I say. Yep.
1:49
Three cheeses, I say.
1:51
It's a comforting dish.
1:55
It's going to feed plenty of people.
1:59
All right, just run your knife through
2:01
the slices
2:04
and you'll get some nice dices here. The
2:06
onions will melt down and distribute all
2:09
through the casserole, so don't worry
2:10
about that. This is the only thing we're
2:13
going to be chopping up. Unless you want
2:14
to get some garlic going, you can do
2:16
that. We're going to add that into the
2:18
ground beef. And then we're going to get
2:20
those nice and softened down and browned
2:22
up with the ground beef. Once your
2:24
ground beef is all browned up and your
2:26
onions are softened down, we're going to
2:28
remove the excess grease that's in our
2:30
pan. We're going to start with a can of
2:32
diced tomatoes. This is a 14.5 ouncez
2:35
can.
2:37
Right, let's add that in.
2:39
Then for a little kick, it's mild
2:41
though. We're going to be using a 10 oz
2:44
can of Rotel. Now, Rotel is diced
2:47
tomatoes and green chilies. Now, we got
2:50
to get some flavor going on. I've got
2:52
some salt. What about half a teaspoon?
2:55
1/4 teaspoon of black pepper.
2:59
A good whopping amount of garlic powder.
3:05
I'm going in with one teaspoon. Now, I'm
3:07
going to enhance the onions that are
3:09
already in the dish. And I've got some
3:11
onion powder. And we'll do the same
3:13
thing. We'll just get it on in there.
3:16
about half to a teaspoon. We're going to
3:19
stir this all together.
3:22
What I want to do is let these flavors
3:24
meld together for about 15 minutes.
3:28
While that's happening, we're going to
3:30
start our pasta. Our water came to a
3:32
boil. I'm going to be using these
3:34
noodles are extra broad no yolk egg
3:37
noodles. Yeah, that's our favorite,
3:40
right? This is a 12 oz package. Now, the
3:43
ground beef lombardi casserole is a
3:45
layered dish. So, what we're going to do
3:49
is salt the water because the pasta is
3:52
going to be its own layer. I have to
3:54
make it nice and creamy. So, I'm going
3:56
to put in about few teaspoons of salt.
4:00
Salt that water, get it nice and
4:02
flavored. That way, our noodles will be
4:05
nice and flavored.
4:08
We're going to cook these per the
4:10
directions on the back of the package
4:12
for al dente because this will finish
4:14
cooking in the oven. So, we're going to
4:17
cook this for about 8 to 10 minutes.
4:20
While this is simmering, grab a spoon.
4:23
Check for flavorings. Okay.
4:26
Make sure you blow on it.
4:31
M.
4:32
Yeah, that's delicious. I definitely get
4:35
that hint of heat from the Rotel.
4:39
It's distributed nice in there.
4:43
All right, the noodles are cooked. What
4:45
I'm going to do is drain them and we're
4:47
going to place them back in the pot.
4:51
Now, to that layer, we're going to add
4:53
in one cup of sour cream. I'm using this
4:57
right here. Now, if you don't want to
4:59
use the sour cream, you can use full fat
5:01
Greek yogurt, the original flavor, not
5:04
any kind of flavorings or anything like
5:06
that. Get this all mixed together. You
5:09
want those noodles nice and coated with
5:11
the sour cream.
5:14
Guess what, you guys?
5:16
This is layer one. We're going to grab a
5:19
9 by13. We're just going to spray it
5:21
with some non-stick cooking oil. You can
5:24
use some olive oil or avocado oil. I'll
5:27
rub some butter all over the baking
5:30
dish.
5:32
All right, let's put that first layer
5:34
in. Poured all the noodles into the
5:36
bottom of our baking dish that's already
5:38
been prepared. We're just going to
5:40
spread them out nice and even.
5:44
Nothing's going to get mixed. It's just
5:47
going to get layered.
5:51
Remember that right there?
5:54
We're going to take that and we're going
5:55
to pour it all over the noodles. And I
5:57
think what I'm going to do is just get a
5:59
big gigantic spoon and do that so it's
6:01
nice and even and spread out.
6:06
Now all the juices
6:08
from our mixture right here with the
6:10
tomatoes and the ground beef and onions
6:12
and seasonings
6:14
are going to seep into the noodles.
6:20
Just spread it out on it nice and even.
6:33
Mhm.
6:39
Look at that, you guys.
6:41
We have another layer. So, this is a
6:44
three cheese casserole. That's what
6:46
Lombardi is all about. So, we have
6:49
Parmesan cheese and we're going to grate
6:53
that. Now I'm doing a whole triangle of
6:55
the Parmesan.
7:00
And then we're going to do some cheddar
7:02
cheese. About 8 oz and 8 oz of
7:06
mozzarella cheese.
7:09
Look at that. We're going just keep
7:10
pushing it down.
7:16
Now, these are the three cheeses I'm
7:18
using. You can certainly change it up if
7:21
you want to do that. Put some Monterey
7:23
Jack cheese in there to offset the Rotel
7:26
that went in there. That's a good one to
7:28
put in there.
7:32
Now, I was going to talk about the pasta
7:34
also is that you don't have to use the
7:36
egg noodles. You can use any pasta for
7:38
this dish that you want. Just make sure
7:40
you cook it per the directions on the
7:42
back of the package till it's all dente.
7:46
All right, there we go. I'm going to
7:48
sprinkle the cheese on our casserole
7:51
right there
7:55
in any order that you want. And that's
7:57
going to melt all through this
7:59
casserole. That parmesan cheese is going
8:02
to add such a nuttiness to the dish,
8:04
too, which is a whole another layer of
8:07
flavor. And that mozzarella cheese, such
8:10
a soft cheese, it'll melt and it'll just
8:13
make a nice melty cheese on top.
8:16
All right, look at that. You guys,
8:21
did I over cheese or under cheese? Y'all
8:23
let me know.
8:25
Is there such a thing as over cheesing a
8:28
dish? I don't think so.
8:31
All right, you guys. As fast as that
8:33
came together, it's going to take even
8:35
less in the oven. All right, I've got my
8:37
oven preheated at 350°. We're going to
8:40
bake this in the oven for 15 to 20
8:43
minutes until that cheese is nice and
8:46
melted. Everything is heated through. We
8:48
got a nice golden color across the top.
8:52
Okay, you guys, look at that. I just
8:54
pulled it out of the oven. The cheese is
8:58
nice and bubbly. Got a golden color to
9:01
it. I'm going to add a little bit of
9:04
fresh parsley on top. Give it a pop of
9:07
color. Make it look like you love it.
9:09
I'm going to grab a spoon. We're going
9:11
to dig in. That's the best way to do it.
9:12
And give it a try for you. Grab the
9:14
biggest spoon you can find. We're going
9:16
to hope for the biggest cheese pull.
9:20
Look at that, you guys.
9:23
Oh yeah. My ground beef Lombardi
9:28
casserole. What do y'all think? The
9:30
house smells amazing. Perfect for the
9:35
rainy days we've been having. We need a
9:37
comforting meal. There's my bite.
9:45
That layering,
9:47
that's amazing.
9:49
You can make a full meal with that.
9:50
Layer in some green beans or peas and
9:53
carrots or some, you know, cooked
9:56
broccoli. Give me a thumbs up on this
9:58
one.
