Today I'm going to show you how to make
0:02
easy Spanish rice. This is the ultimate
0:06
side dish that you can pair with any
0:08
Mexican main dish. So, let's go ahead
0:11
and get started. We are going to be kind
0:13
of lightly browning our rice to give it
0:16
a nice nutty flavor to it. I'm going to
0:20
be measuring out 1 and 1/2 cups of
0:23
uncooked white long grain rice. I'm
0:28
going to put it into a strainer
0:39
and then we'll rinse it under cold water
0:41
a few times.
0:44
That'll help get a lot of that starch
0:46
off of the rice.
0:56
All right, I'll be back.
1:09
I'm going to bring a bowl over and I've
1:11
just put some paper towels in and we'll
1:14
put the rice inside there and just kind
1:15
of pat it dry to get a lot of the excess
1:18
water off.
1:26
There we go.
1:32
Just kind of pat it dry.
1:43
Now, I'm going to be using a large deep
1:45
skillet because we're making a lot of
1:47
rice. I'm going to place it on a
1:50
mediumigh heat
1:54
and we're going to add in
1:57
one tablespoon of some olive oil.
2:03
That right across the top.
2:05
What we're going to do is add in about
2:08
half of an onion that I've chopped here.
2:17
We're going to soften down the onions
2:19
for about three to four minutes.
2:22
Give them some nice color.
2:26
Got to have that onion in there.
2:30
But if you want to skip the onion step,
2:32
you can do that.
2:37
All right. What I'm going to do now is
2:38
add in two teaspoon of minced garlic.
2:44
One and two.
2:52
Just stir that in for 1 minute to help
2:55
release the flavors of the garlic.
3:00
Now I am going to add another tablespoon
3:03
of some cooking oil. And that's right
3:05
before we add in the rice.
3:15
And now what we're going to do is add in
3:17
that one and 1/2 cups of rice that we
3:21
rinsed and dried off a little bit.
3:38
Now, we're going to toast the rice for
3:39
about five minutes. So, watch your
3:41
timer. Just push the rice around.
3:45
We want to get it nice and
3:48
coated with the oil.
3:51
And we want to cook it just until it's
3:54
lightly browned.
3:57
It'll give it a nice nutty and toasty
4:00
flavor to the rice and add a depth of
4:02
flavor to the dish.
4:09
You want to be continually stirring.
4:12
And I like to flatten it out.
4:21
And then stir again. And then just keep
4:23
doing that. You can see the color of
4:26
that rice changing. That looks good.
4:32
Okay. You can see that the rice is nice
4:34
and toasted.
4:37
So, we're going to go ahead and add All
4:40
right. Once my rice was nice and golden
4:42
brown and nice and toasty, I went ahead
4:44
and added in two cups of chicken broth,
4:48
which you didn't see happen, but it did.
4:51
There it is.
4:53
And then what I've done is taken a jar
4:57
of chunky salsa.
5:00
It's got the tomatoes in it. It's got
5:02
peppers in it. And it's just so yummy,
5:06
right? It's a shortcut
5:08
version
5:10
of how they make Spanish rice.
5:14
So, we're going to add that in.
5:21
And then we're going to add in some taco
5:24
seasoning. Now, you can take a pack of
5:27
taco seasoning that you can get from
5:29
your store and add one tablespoon to
5:31
that. I'm using my homemade taco
5:35
seasoning that I have right here, if you
5:37
can see that.
5:40
And you can find this recipe for a big
5:43
batch taco seasoning on my recipe blog,
5:47
catherine'splates.com.
5:50
Look how pretty that looks. Yeah.
5:56
All right, we're going to mix this
5:57
together.
6:03
till it's all combined.
6:09
Oh, look at that. It smells delicious,
6:11
you guys. It smells delicious.
6:16
Now, you can control the salt that goes
6:17
in here by your chicken stock. I'm using
6:21
the low sodium. It's the 33% less. And
6:26
then also, I have very minimal salt. in
6:29
my taco seasoning. And that's what you
6:32
can control also when you make your own
6:33
taco seasoning is what goes in it. And
6:37
this is perfect for us. All right.
6:41
What we're going to do now is place a
6:43
lid on.
6:48
We're going to turn the heat down to
6:50
low.
6:52
And then we're going to simmer this for
6:54
about 20 minutes until that rice is nice
6:57
and tender and all the liquid has been
6:59
absorbed.
7:05
Oh, look at that you guys. Looks good.
7:13
Oh, look at the textures to that.
7:20
You can see the tomatoes in there, the
7:22
peppers, the onions.
7:26
It's nice and fluffy. Love it up. Look
7:29
at that.
7:34
Me grab a fork.
7:42
Now, you can find this recipe for the
7:44
Spanish rice on my channel,
7:45
catherine'splates.com.
7:47
Just search for Spanish rice. Also,
7:49
where you can find the taco seasoning.
7:53
It's called Big Batch Taco Seasoning.
7:55
Let me give this a try.
8:04
That's good, you guys. That's very
8:06
delicious.
8:08
Now, you can control the heat inside of
8:11
your Spanish rice. I've used the medium
8:15
chunky salsa. And if you want to get it
8:17
milder, of course, just get the mild
8:21
chunky salsa.
8:24
