Welcome back everyone to Katherine's
0:01
Plates where it's always simple, easy,
0:03
and delicious in my kitchen. Let's make
0:06
one skillet unsted cabbage roll
0:09
casserole. Now, this recipe comes out of
0:13
my second cookbook, Katherine's Plates,
0:16
Making Home Cooking Easy,
0:20
and it's on page 40. But you can also
0:23
find this recipe on my recipe blog,
0:26
katherine'splates.com.
0:28
If you follow along with me today,
0:30
you'll get some tips and tricks and some
0:33
things that I like to switch up in my
0:36
recipe. I've had this for a very long
0:38
time, and every time I make it, things
0:40
change, of course. All right, so we're
0:43
going to go ahead and get started. This
0:45
is a one skillet meal or one pot. I'm
0:48
going to be using my Dutch oven right
0:50
here cuz I got a lot of cabbage I'm
0:51
going to be putting into this. It's a
0:54
one pot meal, you guys. It is simple as
0:56
that. We are going to put everything in
0:59
here. Even the rice is going to cook in
1:01
here. We're just going to chop up a few
1:03
things. It's kind of like a dumpand go
1:05
recipe. All right, you guys. Let's go
1:08
ahead and get started. And I believe the
1:10
first thing is going to be the onion. I
1:13
grew up on cabbage rolls. My mom made
1:16
them all the time for us when I was
1:18
young. Then she passed the recipe on to
1:20
me and I love them. But sometimes they
1:23
can take a little time
1:26
to roll the cabbage and get the leaves
1:29
going. My daughter Rihanna, she's moved
1:31
out and she has her own place and she's
1:33
been trying my recipes at her house,
1:36
saving her some money by not eating out.
1:39
And she's made my beef balls and now she
1:41
wants to make my cabbage roll. So, I'm
1:43
super excited. I told her, "Get me on
1:45
the phone if she needs me." So, I don't
1:47
mind.
1:49
I've got a medium yellow onion. And I'm
1:52
just going to cut it in half. I've
1:53
already taken off both ends and peeled
1:56
off that outer layer. I'm just going to
1:58
lay both halves on the cutting board
2:00
here. Now, I want nice fine dices with
2:04
this.
2:07
So, I'm just going to slice my onion.
2:10
And then we'll just turn it around. And
2:11
then we'll just run the knife through
2:13
and we'll get dices. Let's start heating
2:16
up our pot. We'll put some oil in it.
2:26
Now, I'm using a large Dutch oven or a
2:29
large pot, and it's about the size of my
2:31
hand here. That'll give us room to cook
2:34
everything in it. I'm going to add in
2:36
two tablespoons of some cooking oil.
2:38
We'll start heating that up. It looks
2:40
good. On a medium high heat, go ahead
2:43
and start adding the onion, and then
2:44
we'll brown those down, which will give
2:47
it nice flavor.
2:56
All right, we're going to cook these
2:57
down for about 2 to 3 minutes until they
2:59
get nice and soft. And I do like to add
3:01
a little color to the onion cuz that's
3:03
just another layer of flavor. The onions
3:05
have sweated down.
3:08
Nice and soft.
3:11
Got a little color to them. What I'm
3:13
going to do now is add in our ground
3:14
beef. Now, my recipe calls for 1 and 12
3:17
lbs. I'm just going to be doing in one
3:19
pound today. It's just Thomas and I. And
3:22
we'll have a little extra for leftovers.
3:25
Just break it up. We'll brown it up.
3:28
While that's happening,
3:30
let's take a look at this cabbage. Now,
3:32
I've washed off my cabbage. This is
3:34
about a medium size. It's not really
3:37
that big, but what I like to do is just
3:39
set it on its stem there. Take a large
3:42
sharp knife and I cut off the four
3:45
sides.
3:52
Then we'll cut off the top
3:55
and then anything extra. Now, I'm just
3:58
going to cut these into bite-sized
4:00
pieces so it's manageable for people to
4:03
eat.
4:04
Now, while we're doing this, we're still
4:06
going to be checking on our ground beef
4:07
here, moving around, getting it nice and
4:10
browned up.
4:13
This is a great meal to have when it's
4:15
raining outside. That's what it's doing.
4:17
Much easier to do it like this and make
4:21
cabbage rolls broken down.
4:29
And then we'll get the last one here.
4:31
I'm going to cut this one a few times
4:33
cuz it was a bigger end there.
4:37
Look at that.
4:43
Once your ground beef is all browned up,
4:45
broken up, looks good in there, I'm just
4:47
going to push the meat off to the side.
4:49
We're going to drain it. So, I'm going
4:51
to get some paper towels and just lay it
4:53
in there.
4:57
Spin it around.
5:00
Absorb up any of that excess grease in
5:02
here. All right, let's start
5:04
incorporating the cabbage. Start
5:07
breaking it down. wilting it down just a
5:10
little bit so it all fits.
5:15
All right, we're gonna add the rest.
5:21
I didn't try to break up my ground beef
5:23
too much, so I didn't use my meat
5:24
chopper because I really wanted big
5:26
pieces of meat in here.
5:29
This will be a nice hardy dish. We've
5:32
softened down the cabbage somewhat, so
5:34
now we can add some more stuff to our
5:35
pot.
5:37
We're going to add one can of tomato
5:39
soup, which is 10 oz. Now, if you don't
5:42
want to do that, you can also just add
5:44
one can of tomato sauce, about 10 ounces
5:47
of that. But I've always cooked with
5:50
tomato soup when making cabbage rolls.
5:53
Add that in. I'm going to fill the can
5:56
up with some water. We're going to stir
5:58
that up.
6:01
Add that in.
6:06
There we go. We're going to add in one
6:08
tablespoon of minced garlic.
6:12
Now, I've got some uncooked long grain
6:15
white rice, and we're going to add in
6:19
one cup.
6:28
Now, to give it some flavor, we're going
6:30
to add in one can of Rotel tomatoes,
6:32
which is just diced tomatoes and green
6:35
chilies. It'll add a little heat to it
6:37
and some extra flavor. This is 10 oz
6:40
can. I'm going to open that and add it.
6:42
We're going to add in 10 oz of chicken
6:46
broth. I'm just going to fill up my can
6:48
here.
6:51
We're going to add that in.
6:54
Now, we've got rice. We've got cabbage.
6:56
We've got tomatoes. We've got ground
6:58
beef. We've got onion. So, we're going
7:00
to season this with a good amount of
7:02
salt.
7:05
I'm using pink Himalayan salt.
7:09
And then we're going to add in some
7:10
black pepper.
7:14
Good amount. About half a teaspoon of
7:16
each.
7:18
Let's stir this all up.
7:21
We want to bring this to a boil.
7:26
I'm going pull down everything off the
7:27
sides so it cooks
7:31
now. I do give this a very delicious
7:33
topping at the end.
7:36
All right, I can see that it's coming to
7:38
a boil.
7:40
We're going to place a lid on.
7:46
We're going to lower the heat down to a
7:49
low. We're going to cook this for 20
7:52
minutes until that rice is nice and
7:55
tender and cooked through and all the
7:56
liquid has been absorbed. Now, we do
7:58
have something else we're going to do to
8:00
finish this off.
8:05
Let's take a look, you guys. Doesn't
8:08
that look delicious?
8:11
We're going to grate one cup
8:14
cheddar cheese. Got to have something to
8:18
give that little oomph. add that on top
8:20
of our casserole. Okay, so I've put the
8:23
cheese all over the casserole here and
8:26
then I'm going to place the lid back on.
8:30
My burner is off and we're going to let
8:33
the cheese melt for just a few minutes.
8:37
Oh, look at that, you guys.
8:42
All right, look at that.
8:45
Y'all jealous? Go get you a head of
8:47
cabbage. Some simple pantry ingredients.
8:49
Look at that. One skillet unsted cabbage
8:53
roll casserole.
8:56
I need a fork. There's my bite.
9:04
It's delicious every time.
9:08
Look at that.
9:10
