Welcome back everyone. I'm going to
0:02
bring joy to your life today by making a
0:05
plum upside down cake. This recipe was
0:09
provided to me by the Belchurers who are
0:12
Advent watchers of Catherine's Plates.
0:14
So, I want to thank you so much cuz I'm
0:17
going to appreciate this. My husband
0:19
will and my mom who heard this recipe
0:23
wants her share also. Now, the plum
0:25
upside down cake. It features
0:27
caramelized plums nestled in a buttery
0:31
brown sugar topping on a moist and
0:34
tender crumb cake enhanced by vanilla
0:39
and cinnamon. All right, what' y'all
0:41
think? Did it sound delicious? Is it
0:43
going to bring joy to your life?
0:46
All right, you guys. So, I've got four
0:48
plums here, and I'm going I've already
0:51
washed them off, and we're going to cut
0:53
these into slices, kind of like wedges.
0:56
Okay, we're going to get started with
0:58
that. You're going to take your plum.
1:00
Now, plums can be anywhere between a
1:02
yellow and a deep, deep red, almost to a
1:05
purple color.
1:07
You'll find them in many different
1:08
colors wherever you find your plums at.
1:13
So, I'm taking my knife and I'm just
1:14
going to go around the whole plum. I'm
1:16
just going to kind of loosen it up a
1:17
little bit. And then I'm going to take
1:19
my knife and go in and just kind of make
1:20
slices all the way to the seed. and then
1:24
just pop it out like that. Already got
1:27
one done right here. So, I'm going to
1:29
finish these up and then bring you back.
1:34
All right, let's go to the next step.
1:36
I'm going to be in a small saucepan and
1:38
all we're going to do is melt some
1:40
butter.
1:42
Just going to put it on a high heat.
1:44
We've got half a stick of unsalted
1:47
butter.
1:50
We're just going to melt that. You can
1:51
melt it in the microwave, too, if you
1:53
want to do that.
1:55
We've got our melted butter. We're going
1:58
to place it into our baking pan. Now,
2:01
the recipe also says that you can place
2:03
your 9 in baking pan on your burner on a
2:06
low heat, put your butter in, and melt
2:08
it there. I don't want to do that
2:10
because it may be too hot to handle
2:13
while I'm putting in the plums. Now,
2:15
what we're going to do is I've got half
2:18
a cup of brown sugar and we're going to
2:20
sprinkle that on top. This was a packed
2:23
light brown sugar. And just sprinkle it
2:25
all around. Get a nice coating nice and
2:28
evenly.
2:30
This is going to create that caramelized
2:34
liquid on top of the plums there. It's
2:37
going to melt right in and create a
2:39
delicious sauce for the cake, too. There
2:42
we go.
2:43
Now, we're going to take these delicious
2:45
plum slices and we're going to lay them
2:47
in a circular pattern in our baking dish
2:49
on top of that butter and brown sugar.
2:52
You know, this is an upside down cake,
2:54
so it's going to look beautiful when we
2:55
flip it out. Hopefully,
2:59
just start on the outer side here and
3:02
then lay them on. It'll look really
3:04
pretty
3:07
if you kind of overlap them a little bit
3:09
like that. Can y'all see that?
3:15
Can't you just imagine what they're
3:16
going to look like on the other side?
3:18
Because I still got the center.
3:23
I love the little spiral effect. There
3:26
we go. All right, let's set this aside.
3:29
Let's go ahead and make the dry
3:31
ingredients.
3:32
Now, in a medium bowl, I've got 1 and
3:35
1/4 cups of allpurpose flour. We're
3:38
going to add in 1 and 1/2 teaspoon of
3:42
baking powder.
3:44
And then we're going to add in
3:47
cinnamon, half a teaspoon. It's going to
3:51
be our flavors in this cake. Cinnamon
3:52
and vanilla.
3:55
And then we're going to add in just a/4
3:57
teaspoon of salt.
4:01
We're just going to whisk this together.
4:02
Get it nice and blended. It airrates the
4:05
flour and distributes the baking powder,
4:08
cinnamon, and salt throughout the flour.
4:10
All right, let this set this aside. Now,
4:12
we're going to cream together a few
4:14
ingredients. I've got one stick of
4:17
unsalted butter, which is half a cup.
4:21
Make sure it's nice and soft. You want
4:23
it to do that right there. Nice and
4:25
soft.
4:27
And then we're going to add to that 3/4
4:30
cup of white granulated sugar. And then
4:33
we're going to beat it with an electric
4:35
hand mixer for about 2 to 3 minutes
4:37
until it's nice and fluffy and light in
4:40
color.
4:45
We're going to crack in two eggs one at
4:47
a time and then we'll beat them in.
4:55
That's number two.
4:58
Just until combined.
5:00
All
5:03
right, I'm just going to scrape down the
5:04
sides. We're going to add in one
5:07
teaspoon of vanilla extract. Beat it
5:10
until just combined.
5:14
We're going to bring the dry ingredients
5:16
back over. Plus, we got half a cup of
5:19
milk. And we're going to alternate as
5:21
we're mixing. So, I'm going to place in
5:23
one/3 of the dry ingredients. Mix that
5:26
in
5:29
just until combined. And then we're
5:31
going to add in half of the milk.
5:35
We'll mix that in.
5:38
And then we'll add another third of the
5:41
flour.
5:43
Blend that in.
5:47
We'll add the rest of the milk.
5:50
I'm going to push down the sides. Make
5:52
sure that flour is nice and
5:53
incorporated.
5:56
beat that in
5:58
and then we'll add the rest of that.
6:02
We'll beat that in until just combined.
6:03
Don't over mix. We're good.
6:07
Now, we're going to take the batter and
6:09
we're going to place it on top of our
6:11
perfectly aligned plums in there. We
6:14
want to be very careful because we don't
6:16
want them going all wishy-washy in
6:17
there. I've decided I'm going to use
6:19
like the ice cream scoop and I'm going
6:21
to go in and I'm just going to plop the
6:23
batter all over it. And then we'll
6:25
smooth it across the top evenly.
6:27
Hopefully that'll work. Keep those
6:28
things lined nice and pretty.
6:31
There we go.
6:34
Yeah, I think that'll work out really
6:36
good. Keep them pretty close together.
6:43
All right, I'm going get my offset
6:44
spatula. All right. So, I sprayed along
6:46
the inside sides right here with some
6:49
baker's joy cuz I don't think it was
6:52
greased enough with the butter because
6:53
we left the butter on the bottom there.
6:55
So, I just went ahead and sprayed the
6:57
sides. I want to make sure that cake's
6:59
not going to stick. All right. I'm just
7:01
going to spread this evenly across the
7:04
top, being very careful. It's a thick
7:07
batter. Make it nice and even so it
7:09
cooks nice and even.
7:12
I got my oven preheated at 350°.
7:15
We're going to bake this cake for 40 to
7:18
45 minutes until we get a toothpick to
7:21
go into the center of the cake and come
7:23
out nice and clean. Come back. So, we're
7:25
going to finish this off. All right.
7:27
After you remove the cake from the oven,
7:30
allow it to rest for 10 minutes inside
7:32
of the pan. Then, we're going to take
7:34
just a knife. We're going to run it
7:37
along the outside edge of the cake,
7:39
along the edge of the pan, and just go
7:41
around and make sure this thing's going
7:43
to pop out. We're going to take our
7:45
serving platter.
7:48
We're going to place it upside down on
7:50
top of the pan. And then we're going to
7:53
flip the whole thing over.
7:58
We're going to give it a shake. Shake.
8:00
Shake. Y'all ready for the reveal?
8:04
Oh,
8:05
look at that beautifulness right there.
8:08
Look at that, you guys.
8:11
Beautifully presented. Wouldn't that
8:13
look good on your Easter table? Oh my
8:15
gosh. Or any occasion.
8:18
That's the thickness of it right there.
8:20
I'm going to cool this down just a
8:22
little bit so we can get some nice
8:23
slices from it and give it a try for
8:25
you. All right, let's cut into it.
8:29
Those plums are so soft. Here
8:37
we go, you guys.
8:40
Look at that. We are thanking the
8:42
Belchers for this recipe today. Plum
8:45
upside down cake. Thank you so much for
8:48
the recipe. I'm ready to give that a try
8:51
for you. All right, there's my bite.
9:01
That is everything it promised. The
9:04
caramelized plums with that brown sugar
9:07
butter glaze,
9:10
that tender cake. It's nice and fluffy
9:15
with a hint of cinnamon. I can
9:17
definitely get that hint of it. And the
9:20
vanilla,
9:22
you guys, that is everything
9:26
that we discussed.
9:28
It's perfect. Look at this. A nice
9:31
springtime to summer cake for any
9:34
occasion.
