Pasta and Sausage Soup

This is a very comforting soup with a delightful little pasta called orzo and italian sausage. I love how creamy this soup is and so full of delicious flavor. Bring on Fall and Winter and be ready with this soup.

Pasta and Sausage Soup

Ingredients

  • 1 lb ground italian sausage
  • 1 sm onion, diced
  • 2 cqrrots, diced
  • 2 celery stalks, diced
  • 2 tsp minced garlic
  • 1/4 cup all purpose flour
  • 5 or more cups chicken broth
  • 12 oz uncooked pasta (I used orzo)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp italian seasoning
  • 6 oz fresh spinach
  • 2 cups heavy cream or half & half
  • 1/3 cup shredded parmesan cheese

Instructions

  • In a large stock pot or dutch oven heat 1 TBS oil and 1 TBS butter over medium high heat. Saute onion, carrots, and celery for 5 minutes and season with salt & pepper to taste.
  • Add sausage and cook until browned thoroughly.
  • Add garlic and Italian seasoning and cook for 1 additional minute.
  • Mix in flour and cook for 1 minute stirring continually.
  • Gradually add in chicken broth stirring continually.
  • Bring to a boil and add in your pasta. Cook for 10-15 minutes until pasta is done.
  • Turn off burner. Add in spinach, heavy cream, and parmesan cheese. Mix together. Enjoy.
