This is a very comforting soup with a delightful little pasta called orzo and italian sausage. I love how creamy this soup is and so full of delicious flavor. Bring on Fall and Winter and be ready with this soup.
Pasta and Sausage Soup
Ingredients
- 1 lb ground italian sausage
- 1 sm onion, diced
- 2 cqrrots, diced
- 2 celery stalks, diced
- 2 tsp minced garlic
- 1/4 cup all purpose flour
- 5 or more cups chicken broth
- 12 oz uncooked pasta (I used orzo)
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp italian seasoning
- 6 oz fresh spinach
- 2 cups heavy cream or half & half
- 1/3 cup shredded parmesan cheese
Instructions
- In a large stock pot or dutch oven heat 1 TBS oil and 1 TBS butter over medium high heat. Saute onion, carrots, and celery for 5 minutes and season with salt & pepper to taste.
- Add sausage and cook until browned thoroughly.
- Add garlic and Italian seasoning and cook for 1 additional minute.
- Mix in flour and cook for 1 minute stirring continually.
- Gradually add in chicken broth stirring continually.
- Bring to a boil and add in your pasta. Cook for 10-15 minutes until pasta is done.
- Turn off burner. Add in spinach, heavy cream, and parmesan cheese. Mix together. Enjoy.
