Peach Cheesecake Pie - Freezer Dessert

Ingredients

Graham Cracker Crust

  • 12 graham crackers
  • 1/4 cup white granulated sugar
  • 1/2 cup butter, melted

Filling

  • 3/4 cup heavy whipping cream
  • 2 (14oz) cans peaches, drained (you can also use fresh peaches)
  • 2 (8oz) pkgs cream cheese, room temperature
  • 3/4 cup white granulated sugar
  • 1 tsp Vanilla Extract

Instructions

  • Break graham crackers into a fine crumb. Place into bowl. Add sugar and melted butter. Mix well until all crumbs are wet. Pour mixture into a 9 inch pie plate, push down and flatten bottom and sides. Bake in a 375 degree preheated oven for about 7 minutes until golden.
  • In a small bowl using an electric hand mixer beat the heavy whipping cream until stiff. Set aside.
  • In a food processor puree 1 (14oz) can of peaches, drained) Set aside.
  • In a large bowl add both packages of cream cheese, 3/4 cup white granulated sugar and 1 tsp vanilla. Using an electric hand mixer, blend until smooth. Add the pureed peaches and blend until well combined.
  • Add the whipped topping and fold in with a spatula (do not use mixer). With the other can of peaches, cut into dice size pieces and fold into mixture.
  • Pour mixture into prepared graham cracker crust and smooth out.
  • Place in freezer until firm. Enjoy.
