Poor Man’s Cookies – Oatmeal Recipe

Great Depression Era Recipe using no eggs or dairy. Very delicious cookies.

Equipment

  • large mixing bowl
  • electric hand mixer
  • measuring spoons & cups
  • 1" cookie scoop
  • large sheet pans with parchment
  • spatula

Ingredients

  • 3/4 cup vegetable shortening (crisco)
  • 1 cup brown sugar, packed
  • 1/2 cup white granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 2 cups old fashioned rolled oats

Instructions

  • Preheat oven to 350 degrees. Line large sheet pans with parchment, lightly greased foil, or wax paper.
  • In a large bowl using an electric hand mixer, blend together shortening, brown sugar, and white granulated sugar until well combined.
  • In a separate medium mixing bowl, whisk together flour, baking soda, and salt.
  • Pour 1/3 of the flour mixture into the shortening sugar mixture and beat until just combined. Add another portion of the flour mixture and again beat until mixed. Finish adding the rest of the flour mixture into shortening sugar mixture and beat until just combined.
  • Slowly beat in water and vanilla extract.
  • Fold in old fashioned oats until just combined.(DON'T OVER MIX.)
  • Using a 1" cookie scoop or a large TBS scoop cookie dough onto prepared sheet pans. Flatten down dough partially.
  • Place sheet pan onto top rack of oven heated at 350 degrees. Bake for 13 minutes or so until golden brown on top and edges of cookies.
    Immediately remove cookies from pan onto a cookie rack and cool and cool completely.
    NOTE: Do not cook below top rack of oven. May cause cookies to spread out.
