- 2 1/2 cups powdered sugar
- 5 oz mini marshmallows (1/2 bag)
- 1 1/2 tsp vanilla extract
- 1/2 tsp salt
Instructions
To Prepare Stove Top Popcorn
- In a large pot add 3 TBS cooking oil. Heat to a medium/medium high. Place in 3 kernels of unpopped corn kernels. Place a lid on. Shake pot around until kernels pop. Remove popped kernels from pot.
- Add in 1/2 cup unpopped popcorn kernels & salt. Place lid back on and shake pot and allow kernels to pop. Once pot is almost full, the popping sound should get slow down.
- Turn off burner. Remove lid once you don't hear the popping. Pour popped popcorn into 2 separate large mixing bowls.
Making the Marshmallow mixture
- In a large sauce pan over medium heat, add in corn syrup, butter, powdered sugar, and mini marshmallows. Whisk until combined & is smooth. Turn off burner. Whisk in vanilla & 1/2 tsp salt.
- Evenly as possible pour mixture into both bowls over the popped popcorn. Using a spatula mix as well as you can to coat the popcorn with the marshmallow mixture.
- Using clean hands, rub 1 tsp of butter on your hands and carefully pull out a mound of prepared popcorn and form into a ball shape. (The size of the ball should be the size of your palm 3-4 inches.) Place popcorn balls on prepared sheet pan.
- Once all balls are formed, allow to set on counter top or refrigerator until cooled and set. Serve up on a decorative platter.
- Place in an air tight container for freshness.
