Equipment

  • large pot (4.5 qt +) with lid

Ingredients

For this step, you can either make your own fresh popcorn, use store made popcorn or make microwave popcorn. You will need 14 cups of popped popcorn.

*Below is recipe for making stove top popcorn.

  • 3 TBS cooking oil (I use avocado)
  • 1/2 cup unpopped popcorn kernels
  • 1/8 tsp salt

*Marshmallow mixture

  • 3/4 cup light corn syrup
  • 1/2 stick butter cut into 4 pats
  • 2 1/2 cups powdered sugar
  • 5 oz mini marshmallows (1/2 bag)
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt

Instructions

To Prepare Stove Top Popcorn

  • In a large pot add 3 TBS cooking oil. Heat to a medium/medium high. Place in 3 kernels of unpopped corn kernels. Place a lid on. Shake pot around until kernels pop. Remove popped kernels from pot.
  • Add in 1/2 cup unpopped popcorn kernels & salt. Place lid back on and shake pot and allow kernels to pop. Once pot is almost full, the popping sound should get slow down.
  • Turn off burner. Remove lid once you don't hear the popping. Pour popped popcorn into 2 separate large mixing bowls.

Making the Marshmallow mixture

  • In a large sauce pan over medium heat, add in corn syrup, butter, powdered sugar, and mini marshmallows. Whisk until combined & is smooth. Turn off burner. Whisk in vanilla & 1/2 tsp salt.
  • Evenly as possible pour mixture into both bowls over the popped popcorn. Using a spatula mix as well as you can to coat the popcorn with the marshmallow mixture.
  • Using clean hands, rub 1 tsp of butter on your hands and carefully pull out a mound of prepared popcorn and form into a ball shape. (The size of the ball should be the size of your palm 3-4 inches.) Place popcorn balls on prepared sheet pan.
  • Once all balls are formed, allow to set on counter top or refrigerator until cooled and set. Serve up on a decorative platter.
  • Place in an air tight container for freshness.
