Quesarito (Taco Bell Copycat Recipe)

Ingredients

Cilantro Lime Rice

  • 1 TBS butter
  • 1 TBS cooking oil (avocado or olive oil)
  • 1/2 medium yellow onion, diced small
  • 1 cup uncooked long grain white rice
  • 1 cup chicken broth
  • 1 cup water
  • 1 TBS lime juice
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp ground cumin
  • 1/4 cup cilantro, finely chopped

Ground Taco Meat

  • 1 lb ground beef
  • 1 pkt taco seasoning (3 TBS)
  • 1/2 medium yellow onion, diced
  • 1/4 cup water

Quesadilla

  • 8 burrito size flour tortillas
  • 2 cups shredded mexican cheese blend
  • 1/4 cup canned nacho cheese sauce
  • 1/4 cup sour cream

Instructions

Making Cilantro Rice

  • Rince rice in a colander until water runs clear. Pat rice dry with a paper towel.
  • In a medium sauce pan heat to a sizzle one TBS butter and one TBS cooking oil. Add in 1/2 yellow onion diced. stir and cook for 3 minutes until softened. Stir in rice for 3 more minutes until rice gets a light tan color to it.
  • Stir in chicken broth, water, lime juice, salt, garlic powder, and ground cumin over high heat bringing it to a boil.
  • Lower heat to a low setting, place a lid on sauce pan, and cook for 20 minutes until rice is tender and liquid has cooked out. Turn off burner.

Making the Ground Beef Taco Meat

  • In a medium skillet over medium high heat, add ground beef and a diced 1/2 medium yellow onion. Break up and brown ground beef & soften onion. Drain excess grease from pan.
  • Stir in taco seasoning and water. Let simmer for 3-4 minutes. Turn off burner.

Making Quesadillas

  • In a large skillet over medium high heat place one burrito size flour tortilla. Cover tortilla with 1/4 cup of shredded cheese (or more if desired). Place another tortilla on top of cheese. Allow bottom of quesadilla to get golden brown and the cheese on the inside to partially melt.
  • Flip over quesadilla and allow bottom to get golden brown and cheese has fully melted. Remove quesadilla from skillet onto a plate. Make more, if needed.
  • Place 1/4-1/2 cup of the rice in the center of quesadilla. Place 1/4-1/2 cup of taco meat on top of the rice. Spoon on sour cream and nacho cheese sauce on top of taco meat. Sprinkle with additional cilantro, if desired.
  • Tuck in the sides of burrito and start rolling the quesadilla to the center while tucking in the sides to form a burrito shape. Cut in half and serve with taco toppings as desired.
    NOTE: taco toppings: sour cream, pico de gao, cilantro, olives, jalapenos, lettuce, tomatoes, etc.
