6cupsfrozen diced potatoes or diced size russet potatoes
2cupsfrozen vegetables (I used package of green beans, corn, peas and carrots)
1TBSitalian seasoning
salt & pepper to taste
1 1/2cupsmilk
2TBScornstarch
8ozvelvetta cheese
Instructions
In a large skillet, brown ground beef with onion. Add garlic and cook one additional minute. Drain grease and add meat mixture to crockpot.
Add in potatoes, broth, vegetables, seasonings, and salt & pepper to taste. Mix well.
Place lid on and cook on low for 6-8 hours or on high 3-4 hours.
Whisk together milk and cornstarch and mix into soup. Cut vetvetta cheese into squares and place on top of soup, place lid on for 10 minutes and allow cheese to melt. Mix into soup, and enjoy.
