Preheat oven to 350 degrees. Spray non-stick cooking spray into a 9 x 13 baking dish.
Unroll one tube of crescent rolls and lay flat on bottom of prepared baking dish.
Layer deli meats evenly across crescent rolls. Layer cheese over the deli meats. Place the red bell peppers evenly over cheese.
Unroll second tube of crescent rolls and lay flat over the ingredients sealing the edges.
In a small bowl, whisk together egg, Italian seasoning and parmesan cheese. Pour mixture evenly over the top layer of crescent rolls to allow to seep along the edges.
Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until top is golden brown and firm. Allow to cool for 5 minutes and cut into squares.
