Easy Vegetable Fried Ramen

Ingredients

  • 2 packages ramen noodles, any flavor will not need the seasoning packets
  • 1 onion, diced
  • 3 TBS cooking oil (I used sesame oil for great flavor)
  • 1 cup frozen peas and carrots
  • salt & pepper to taste
  • 1 tsp garlic powder
  • 2 TBS soy sauce
  • 2 eggs
  • sesame seeds

Instructions

  • Cook ramen per instructions on back of package. Toss seasoning packets away. Drain noodles and run under cool water to stop the cooking process. Set aside.
  • In a large skillet over medium high heat add 2 TBS cooking oil. Start to saute diced onion to soften.
  • Add peas and carrots, and seasoning (salt, pepper, and garlic powder. Cook and stir for 1 minute.
  • Add in cooked and cooled ramen noodles. Stir to combine. Add soy sauce and mix. Flatten down noodles to lightly fry on one side.
  • Whisk 2 eggs. Move mixture in skillet to one side and flip over to fry on that side.
  • Pour in whisked eggs and let set for 1 minute. Then move eggs around to finish cooking. Start mixing cooked egg with noodles. Turn off burner. Sprinkle mixture with sesame seeds. Enjoy.
